It’s been interesting here in the Northeast. Within the past month, we have had an earthquake, a hurricane, and snow. Fortunately, in my area, we made it out unscathed, but it’s going to be a long, cold winter. Unfortunately for me, I will spend every day of the next six months under four layers of clothes…while indoors! No kidding! I’m SO cold-blooded!!
One of the things that will warm my winter up is this dish. Brussels sprouts are one of those under-appreciated vegetables that many people dislike. I’m not one of them. Yes, they are in the category of vegetables that release a distinctive aroma when cooked. However, they taste so much better than they smell!! When sautéed and combined with bacon, apples, walnuts, apple cider vinegar, and brown sugar, how could they not taste good?
Biting into this dish is like biting into a kaleidoscope of flavors and texture. There is the tenderness of the Brussels sprouts, the crispy/chewy of the bacon, the crunch of the walnuts, and the tender crisp of the apple. There is also a balance of sweetness from the brown sugar, salty from the bacon, and tangy from the cider vinegar. The unassuming, boring Brussels sprouts are transformed into something so much more exciting.
To make it, we start with the bacon. Yum!
Next, remove bacon and sauté the Brussels sprouts until slightly firm.
Add chopped walnuts…
…and apples.
Return the bacon and add the cider vinegar and brown sugar dressing.
Done!

- Wash brussels sprouts. Trim ends and remove any yellow outer leaves. Slice into 1/4-inch slices. Cut the apple into small chunks. In a small bowl, combine apple cider vinegar and brown sugar. Set all aside.
- In a large skillet on medium-high heat, brown bacon until crispy. Remove bacon and place on paper towels. Pour out the fat, reserving two tablespoons in the pan.
- Add Brussels sprouts, salt, and pepper, stirring frequently until sprouts are just slightly firm, about 8-10 minutes. Add a splash of water if sprouts begin to brown and stick to the skillet.
- Stir in nuts and apples. Cook for a few minutes until apples are just slightly firm, not mushy. Return the bacon to the skillet. Add the vinegar and sugar mixture. Adjust seasoning to taste. Serve.
