Rita’s Green Bean Special

This green bean recipe might look familiar to some of you as it was featured on one of my earliest posts. I thought it could use updated pictures as well as a reintroduction to all of you lovely visitors of this blog. It is unarguably one of the easiest and most delicious green bean side dishes to make. As you can see, I am not partial at all 😉 

This is a recipe that I got from my mother-in-law. She used to serve it at practically every Sunday dinner at her house where sometimes there were as many as eight diners. There are very few vegetable sides that eight out of eight people would devour; these green beans are one of them. Over the years, they became a staple in my home as well.

Ingredients

Instructions

  1. Cut bacon into 3/4 inch pieces. Add bacon to a preheated large nonstick 6-quart saucepan on medium high heat. Brown using wooden spatulas to separate bacon pieces, approximately 10 minutes. Drain fat. Set aside.
  2. Return pan to heat and add green beans and beef broth. Cover and allow to come to a boil. Reduce heat to medium low. Simmer for 15-20 minutes, stirring halfway. Remove from heat. Drain most of liquid, leaving about 1/8″ at the bottom of the pan. Stir fried onions. Transfer bean mixture to a serving bowl.
  3. Makes 8 servings.

    I wish the fried onions were Gluten free.

    1. Hi Sue. They are available, but you might have to do a little searching for them. I did a quick Google search and found that Full Circle Market and Ian’s Foods are two brands that make gluten free French fried onion rings. I think Price Chopper and Wegmans carry them, if you have those stores near you.
