One Pot Sausage Brussels Sprouts and Cavatappi is an easy weeknight dinner for the entire family. Sweet Italian sausage, Brussels sprouts, cavatappi, and mozzarella come together for a hearty and delicious meal.

Hi all! It’s been an eventful 1 1/2 week in my neck of the woods. We got buried in 50+ inches of snow in two separate storms, then I saw this awesome concert with Katy Perry, Missy Elliott, and Lenny Kravitz at some football stadium on TV. (Haa Haa)! Seriously, I have to say congrats to our Patriots who brought the trophy home (please don’t hate)!! To be honest, I am not a huge sports fan, but it is exciting when your home team goes to the Super Bowl. And wins!!

Onto the food. After a weekend of dining out and eating game day foods, I decided that I needed a little more Brussels sprouts in my life and came up with this Italian sausage, Brussels sprouts, and pasta dish. Everything was cooked in one pot, so cleanup was reallllly easy. My kind of meal!!

I started by browning and then removing ground Italian sausage in a skillet. Next, I sauteed onion and garlic, followed by Brussels sprouts. I then added the liquid ingredients and allowed the Brussels sprouts to simmer for a few minutes. I then added the cavatappi and returned the sausage. The whole thing was allowed to simmer for another 15-18 minutes until the pasta was al dente. Finally, fresh mozzarella cheese was added, and the pan went under the broiler for a few minutes until the cheese became gooey and bubbly.

My daughter, a fellow Brussels sprouts lover, gave this dish a thumbs up. She and I have been enjoying it the last couple of days. My husband and son, I regret to say, will not touch Brussels sprouts with a 10-foot poll. Therefore, they did not get to taste the fruits of my labor. Oh well…more for us girls!!

One Pot Sausage Brussels Sprouts and Cavatappi is an easy weeknight dinner for the entire family. Sweet Italian sausage, Brussels sprouts, cavatappi, and mozzarella come together for a hearty and delicious meal.

  1. Preheat a large, oven-proof deep skillet or saute pan on medium-high heat. Add olive oil,  sausage, 1/2 teaspoon salt and 1/4 tsp pepper. Cook until sausage is no longer pink (about 7-8 minutes), breaking up into small chunks using a wooden spatula. Transfer sausage to a plate.
  2. Discard fat, reserving 1 tablespoon in pan. Reduce heat to medium. Add onion and garlic. Cook, stirring for 1 minute. Add Brussels sprouts, onion powder, garlic powder, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook for 5 minutes, stirring occasionally. Add water, crushed tomatoes, sugar, Italian seasoning, cavatappi, and sausage. Bring to a boil. Cover and simmer for another 15-18 minutes or until pasta is al dente.
  3. Preheat oven to low broil.
  4. Place mozzarella slices over pasta. Place pan in oven and broil until the cheese melts and bubbles. Garnish with chopped parsley or basil.
  5. Makes 6 servings.

  4. Hi Stephanie! On occasions when my husband actually volunteers to cook, he almost always has a cleanup elf (me) who washes and puts away things for him. I don't have volunteers to do that for me, so anything to make my life easier is a good thing! This is a simple one pot meal that does just that, and it's easy to make, and leaves you feeling well-feed.
