These simple chewy cookies have a lot to like. They are loaded with candy as well as salted cashews. The salted nuts add a subtle hint of saltiness, which provides a nice balance to the sweetness of the candy. If you don’t like cashews, any other salted will be a good substitute.
The cookies are also easy to make. If you don’t feel like dragging out the electric mixer, no problem! This cookie recipe can be entirely hand-mixed. Once the dough is made, it requires a little bit of chill time. A short 30 minutes of resting in the refrigerator is all it needs, and then it’s ready to be baked.
Can you make the dough ahead of time?
Yes, the dough can be made the day ahead and kept refrigerated until ready to bake.
How to store:
Store the cookies in an airtight container on the countertop for up to 4 days and up to 7 days in the refrigerator. To freeze, place in a freezer bag or an airtight container in the freezer for up to 3 months.
Recommended supplies:

- Baking sheet—this half-sheet pan comes with a cooling rack. It is non-stick and has a corrugated surface for even baking. It is also PTFE, PFOA, and BPA-free.
- Electric mixer—this is not necessary, but it can be used. It has seven speeds, a quick-release button, and a lockable swivel cord to prevent the cord from getting in the way.
- Silicone spatula—this set of varying spatulas and a brush is heat resistant up to 500°F.
- Mixing bowls—this set of nesting stainless steel bowls comes with lids. The bowls have non-slip bottoms and a pour spout.
- Parchment paper—this silicone-coated parchment paper is unbleached, chlorine-free, and grease-proof.
- Wooden spoon—for hand mixing. This is a 14-inch made of teak wood.

Instructions
- Preheat oven to 350° F. Line a baking sheet(s) with parchment paper.
- Combine flour, baking soda, and salt. Set aside.
- Using a whisk, beat butter and sugars until creamy. Beat in eggs and vanilla extract until fluffy and smooth. Add oil and whisk until thoroughly incorporated.
- Add flour to the flour mixture. Use a spatula or wooden spoon to blend. Gently stir in white chocolate chips, cashews, and chocolate toffee bits until incorporated.
- Place the dough onto a sheet of plastic wrap. Flatten it to 1 inch thickness. Wrap the plastic wrap around the dough. Refrigerate for at least 30 minutes.
- Drop by rounded tablespoon or a #50 ice cream scoop, at least 2 inches apart, onto the cookie sheet(s). Bake for 7 to 9 minutes, being careful not to overbake.
- Allow to cool for a couple of minutes. Transfer to a cooling rack to cool completely.
- Makes 1 1/2 dozen cookies.
Note:
- If baking on two baking sheets simultaneously, you can quickly switch racks after the midway baking point to avoid losing too much heat.

So since my "summer weight" is out the window, I'm aiming for more of a "fall/winter weight" and these cookies are definitely not helping. I'm totally OK with it though because there's no way skinny jeans could feel as good as these cookies must taste! YUM!
