FUDGY CARAMEL APPLE BUTTER BLONDIES

Hi there! Are you suffering from the post-Labor Day blues like I am? Sadly, we have reached the unofficial end of summer. Although it has been a relatively quiet one for me, I hate to let it go.ย 

I am happy about apple season and the abundance of apple-related products!! Apple picking, apple cider, apple crisp, cinnamon, and donuts all make saying goodbye to summer a little easier.

My contribution to AppleFest season is these most amazing blondies. One bite is all it takes to get hooked. Melted caramel chips and store-bought apple butter provide intense flavor. Chopped walnuts add texture and perfectly cut through the sweetness. These blondies are so easy to make that you can AND WILL want to make them over and over!

What is my trick for making this blondie fudgy and chewy?

First tipโ€”Whip a minimal amount of air into the batter. The more air, the more lift and cake-like the blondie becomes. Less whipping incorporates less air, keeping this blondie dense.

Second tipโ€”For the same reason, use only a small amount of leavening. You need only 1/8 teaspoon of baking soda for 2 cups of flour in this recipe.

Third tipโ€”Eggs also contribute to the fudgy factor (say that ten times!) More eggs make for a cakey brownie. We are not looking for a cakey here. One egg is all this blondie needs.

Fourth tipโ€”Use more brown sugar than granulated sugar (I used light brown sugar). The molasses in it enhances chewiness and moisture. A 3:1 ratio of light brown sugar to granulated sugar is right on.

Last tipโ€”Err on the side of underdone, just like you would for a good steak. These blondies require a baking time of 55 to 65 minutes. When doing the toothpick test, you want the toothpick to come out with visible moisture but no wet clumps.

  1. Preheat oven to 350 degrees F. Prepare an 8″x8″ inch square baking pan with baking spray.
  2. Place the caramel chips and butter in a medium microwaveable bowlโ€”microwave at 20-second intervals at 50% power. Stir. Continue microwaving and stirring until caramel chips are melted. Set aside. Allow to cool slightly.
  3. In a large mixing bowl, beat sugars until they resemble coarse sand. Add butter and a caramel mixture, beating to incorporate. Add the egg and vanilla, beating until the egg is completely incorporated but without adding too much volume.
  4. Add 1/3 of the flour mixture. Mix until the flour is mostly blended. Add 1/2 of the apple butter. Mix to blend in apple butter, scraping the sides of the bowl as needed. It does not need to be fully incorporated. Repeat this by adding and blending 1/3 of the flour mixture and the rest of the apple butter.
  5. End with adding the remaining flour. Mix again until mostly blended. Add chopped walnuts. Mix until all of the flour is incorporated. Refrain from over-mixing. The batter will be thick.
  6. Spread batter in the prepared baking pan. Bake for 55-65 minutes or until a toothpick comes out with visible moisture but no wet clumps. Allow to cool on a wire rack. Cut into squares.
  7. Makes 9 squares, about 2 1/2 inches each.

Notes:

  • For fudgy blondies, do not over-mix blondie batter.
  • If the blondie edges brown too quickly during baking, cover the outer rim of the baking pan with strips of aluminum foil around the 40-minute mark.

    1. Loved the concept of apple butter in the blondies, mine were also a bit too cakey and the bake time is way too long, would start checking for doneness at 35-40 minutes. Still yummy though! Thanks for the recipe!

      1. Iโ€™m so glad you thought the blondie was good!! Since different ovens bake at different rates, to play it safe, I would check for doneness early as well.
