Happy New Year!!! I hope you all had a great start to 2019! My husband and I spent it at home with an intimate party of five. We ate lots, drank some, watched a movie, and called it a night. Both of us are happy to see the end of 2018. The latter half of the year has been trying, especially so for my husband, as we were faced with both of his parents’ failing health and managing all of their affairs. I hope that 2019 will provide a smoother road to navigate and fewer complications.
One thing that is not complicated is this stew. It is a delicious and comforting meal that can easily be put together after a long day. I take advantage of a couple of convenience items to make this stew a 30-minute meal. I love packaged gnocchi. It’s a wonderful thing! It cooks literally in three minutes, perfect for a quick meal. I also like to take the lazy way out with the kale. Fresh chopped packaged kale is a time server. It might cost a little more than chopping my own, but for convenience and speediness needed during the weeknight, it is so worth it.
It’s January, and many of us are trying to eat a little lighter and healthier than we did during the holiday season. You can certainly make slight alterations to lighten up this stew. For flavor, I don’t drain the little bit of fat released from the sausage. But you could lighten it up by draining, then dabbing off the excess fat with paper towels. For added richness and body, I use a 1/3 cup of heavy cream to finish the broth. Feel free to substitute with whole milk for a healthier version. Any way you choose to do it, this stew will be a winner!
This recipe serves four and can easily be doubled. And you might want to. It’s great as leftovers. The flavors will meld even further, and you can enjoy another deliciously comforting meal for lunch again the next day.

- Preheat a 4-quart soup pot over medium to medium-high meat. Add sausage. Brown, breaking up into small chunks, about 5-7 minutes. minutes, stirring frequently.
- Add onion, red pepper, garlic, black pepper, and Italian seasoning. Cook for 3 minutes, stirring frequently.
- Add in kale, corn, and chicken broth. Bring to a boil. Reduce heat to a simmer. Cover and simmer for 8 minutes.
- Bring heat back to medium. Add gnocchi. Cook covered, stirring once or twice for 3 minutes or until gnocchi is tender. Turn off the heat. Stir in cream. Add salt, if needed, to taste.
- Makes 4 servings.

And I have to admit I've never managed to make decent homemade gnocchi, I haven't found that perfect recipe, something is always missing.
Yes, this year need to be better! I have never made my own gnocchi, and with packaged ones that are so tasty, there was little need for me to make my own. Funny how the homemade ones you tried didn't measure up. I hope you'll find the perfect recipe one day!
My husband doesn't eat pork. Would chicken or beef be good in this stew??
