Although I have never taken a genealogical DNA test, I can say with 99.9% certainty that there isn’t one ounce of Irish ancestry in my body. I’m Asian through and through. But on St. Patrick’s Day, I’m Irish at heart.
One of my favorite things about St. Patrick’s is the opportunity to eat corned beef and cabbage. I rarely make it throughout the year because my son and husband are not huge fans of the dish. So, mid-March is my opportunity to get my share of the yummy dish! Can’t wait!!
Of course, a celebration is not a celebration unless there is dessert. These bars are a combination of fudgy dark chocolate brownies and pistachio pudding cookies. Store-bought brownie mix makes these brookie bars deliciously semi-homemade. Just as appealing is the reduction in time and clean up over from-scratch brownies.
With that being said, the cookie component is made from scratch. Instant pistachio pudding mix is added for flavor and color. The combination of brownie and cookie makes for one delightful chocolaty, pistachio-ie treat.
If pistachio is not your thing, you can easily swap it out. Use another pudding mix flavor: strawberry, chocolate, vanilla, cheesecake, red velvet, and caramel…so much to choose from. Chances are, you will not be able to find all the varieties at your store, but they are available online. (My favorite kind of shopping!!)
By the way, this recipe is entirely hand-mixed. A whisk and a sturdy spatula are all you need, but you can use an electric mixer if you wish.
I know it’s still a few weeks away, but whatever you are doing or not doing this St. Patrick’s Day, I hope you will do it with these brownies in hand!

Instructions
- Preheat oven to 350 degrees F. Spray the bottom of a 9″ x 13″ baking pan with cooking spray or line with parchment paper.
- In a medium mixing bowl, whisk butter, egg white, and sugar until smooth. Add almond extract and food coloring (optional). Whisk to blend.
- In a small bowl, combine flour, pudding mix, salt, and baking powder. Gradually mix half of the flour mixture into the wet. Add milk. Mix. Gradually add the remaining flour mixture. Mix to combine, switching to a rubber spatula to mix, if needed. Set aside.
- Add brownie mix, water, oil, and eggs into a large mixing bowl. Whisk about 50 times to combine. Pour into the prepared baking pan.
- Drop cookie dough by spoonfuls on top of the brownie batter.
- Place the baking pan in the middle rack. Place a large foil on the upper rack to cover the top of the baking sheet. This prevents the green from discoloring during baking. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out almost clean. Allow to cool completely.
- Refrigerate for at least 30 minutes before cutting for a clean cut.
- Makes 16-20 bars.
