Recipe highlights:

  • Combine flour, baking powder, and salt in a bowl.
  • Combine cream of coconut, coconut milk, and oil in a bowl.
  • Add wet into the dry ingredients.
  • Add Key Lime Marbleizing Swirl. Whisk to blend.

Helpful tips:

  • To prevent sticking, grease the mugs well, especially at the bottom. Use either baking spray or oil and flour.
  • Baking time may vary depending on the mug size used and the strength of your microwave. Finding the perfect baking time for your microwave might require trial and error. Use the toothpick test to check for doneness sooner rather than later. 
  • The cake is done when a toothpick comes out with a few dry crumbs attached. If it is undercooked, microwave for a few more seconds.
  • As a guide, two 10-ounce cups in my 1000W microwave oven cook in 3 1/2 minutes.
  • Fill mugs no more than 2/3 full to prevent overflow.
  • Place a paper plate under the cup while microwaving to catch any overflow.
  • Once removed from the oven, mug cakes will continue to cook. Do not overcook to prevent dried-out cake.

Can these mug cakes be made ahead?

It is best to make these cakes as you need them. If you are pressed for time, they can be made hours or a day ahead. However, be sure not to overcook. Carryover time will continue to cook the cakes while they sit in the mugs for an extended amount of time. Overcooked cakes will have a hard center. If this happens, reduce your cooking time the next time.

When and how to unmold the cakes?

Whether you are making ahead or consuming right away, wait 15 minutes after the cakes are removed from the microwave to unmold. Slide a thin knife down along the side of the mug to loosen the edges. Turn the mug upside-down onto a small plate and give it one firm shake.

If you plan to eat the cakes later, slide the mug back over them and turn them right side up. Keep the cakes stored in mugs as they cool to prevent them from drying out. This pre-unmolding will allow you to remove the cakes easily at a later time. Once cooled, cover with plastic wrap. 

How to prevent sticking while unmolding the cake?

Use a spray made specifically for baking, or grease and flour the mugs well. The bottom tends to stick. Prepping the mugs well ensures the cake is unmolded with ease.

Instructions

  1. Combine cream of coconut, coconut milk, and oil. 
  2. In a large bowl, combine flour, baking powder, and salt.
  3. Add wet to dry. Blend until just combined.
  4. Stir in key lime marbleizing swirl.
  5. Add enough green food coloring to obtain the desired color. I use less than 1/8 teaspoon. Blend well.
  6. Spray four 10-ounce or larger mugs with baking spray or grease and flour well. 
  7. Fill 2 mugs no more than 2/3 full with cake batter.
  8. Place mugs in a paper plate-lined microwave oven.
  9. Cook both for 3 to 4 minutes, depending on the strength of your microwave. 
  10. Repeat for the remaining two cups.
  11. Allow cakes to cool for 15 minutes prior to unmolding. 
  12. To unmold, slide a thin knife around the edges and down to the bottom of the mug. Turn the cake upside-down onto a small plate. Give one quick shake to loosen.
  13. To make the coconut glaze, combine all ingredients in a small pan. Cook on medium-high, stirring constantly until slightly thickened.
  14. Cake can be eaten warm or at room temperature, drizzled with glaze. Garnish with peanuts.

Notes

  • To gauge your cooking time, my two 10-ounce cups in my 1000W microwave oven cook in 3 1/2 minutes. One cup requires 1 minute 45 seconds.
  • Unmold cakes after allowing them to cool for 15 minutes. 
  • If serving at a later time, you still need to unmold after 15 minutes. Return cakes to mugs to cool completely. This allows them to unmold with ease when ready to serve, and keeping them in the mugs prevents the cake from drying out as it cools.
  • Cover with plastic wrap once completely cooled.
  • If serving hours or a day later, slightly undercook for about 10 seconds. Carryover cooking in hot mugs during the extended cooling period will continue to cook the cakes.
