Who doesn’t love loaded fries?!  Crispy, starchy, and cheesy combination is addicting! These have everything you love about a cheeseburger mounded on a bed of hot, crispy fries. The combination of the cheese sauce and a special sauce makes finger-licking good!

Shortcuts used:

Frozen fries make this a quick and easy dish. I recommend using larger cuts (not shoestring) because they hold up better to the sauce and the topping. Choose your favorite brand.

I use an easy homemade cheese sauce, but if you want to save time, processed cheese sauce will not disappoint! 

Ingredients needed for this recipe:

Don’t be turned off by the length of the ingredients list. A lot of it is seasoning and topping. This recipe largely involves simple mixing and layering. There’s nothing complicated. I promise!

  • Ground beef
  • Oil
  • Onion powder
  • Garlic powder
  • Salt
  • Black pepper
  • Yellow mustard
  • Butter
  • Flour
  • Milk
  • Freshly grated cheddar cheese
  • Ketchup
  • Worcestershire sauce
  • Honey
  • Mayonnaise
  • Hot sauce
  • Shredded cheese
  • Tomato
  • Dill pickles
  • Red onion

Recipe highlights:

  • Preheat oven to bake the fries.
  • Shred cheddar cheese. Prep/chop the vegetables.
  • Put fries in the oven and bake according to package direction.
  • Add oil to a small skillet on medium-high heat. Once hot, add ground beef and seasoning. Cook until meat is no longer pink. Keep warm.
  • Blend special sauce ingredients. Chill.
  • Melt butter in a small saucepan on medium heat. Add flour. Whisk for 1 minute on medium-low heat.
  • Slowly whisk in milk. Add mustard. Whisk until smooth.
  • Add shredded cheese increments, stirring after each addition to smooth before adding the next.

How to store leftovers:

These fries are all about the interplay between the crispy fries and the toppings. They are best freshly made when the fries are crispy, and the cheese sauce is super creamy. Leftover loaded fries become soggy and are never as good.

If you’re making this dish intending to have leftovers, bake just enough fries for what you need. Then, add the topping as you wish. Refrigerate unused toppings in separate air-tight containers. They can be kept for up to 4 days.

How to reheat:

When you’re ready for another round, bake up more fries. Add the leftover ground beef to the last few minutes of the baking time to reheat. In the meantime, reheat the cheese sauce in the microwave or on the stovetop. Tip: add a splash of milk to thin out cheese sauce when reheating if it’s too thick. Then it’s time to plate!

If you’re reheating leftover fries with the fixings already on them, spread the loaded fries on a greased baking sheet and bake until heated through. I don’t recommend microwaving because the fries will not crisp up.

Instructions

  1. Preheat oven to bake the fries according to package directions.
  2. Shred cheddar cheese. Prep/chop the vegetables.
  3. Place the fries in the oven to bake.
  4. Preheat a skillet on medium-high heat. Add oil, then ground beef. Break into large chunks with a spatula. Add onion powder, garlic powder, salt, and black pepper. Break into small chunks and cook until meat is no longer pink. Cover. Keep warm.
  5. For the special sauce, add sauce ingredients into a bowl. Whisk to combine. Chill.
  6. For the cheese sauce, melt butter in a small saucepan on medium heat. Add flour. Whisk for one minute on medium-low heat.
  7. Slowly add about 1/3 of the milk, whisking constantly until there are no lumps. Slowly whisk in the remaining milk. Add mustard. Whisk to blend well. Switch between a silicone spatula and whisk as needed. Try to get into all the corners of the pan to prevent the sauce from sticking to the bottom.
  8. Add shredded cheese in increments, stirring after each addition until smooth before adding the next. If desired, add salt to taste.
  9. Top hot fries with cheese sauce, ground beef, and toppings. Drizzle with special sauce (as much or as little as you want). Serve immediately.
  10. Makes 6 appetizer servings or 2 to 3 main dishes.

  • Cook time provided is based on the average time to bake the frozen potato. The amount of time may vary slightly depending on the brand you use and the cut of the fries. You should have time to prep the remaining components while the fries bake. The total time for the recipe is about 35 minutes.
