Unexpected flavor of mint infuses springtime freshness to One Skillet Ham and Peas Gnocchi with Mint. With minimal prep and less than 15-minutes to cook, this dish is a welcomed addition to any busy weeknight menu, springtime or anytime!

So, this gnocchi dish started with chives as the herb of choice. It was delicious, and with ham and peas, it had a springtime flair. But I was looking for even more of a springtime vibe.

As luck would have it, I found fresh mint left over from summer rolls I had made (they were yummy, thank you very much)! It was exactly what the gnocchi needed to add that extra breath of freshness. I pulled a switcheroo, so out with the chive and in with the mint!

Peas and mint are a harmonious combination and is commonly paired. But did you know that ham and mint are great together too? (At least in my book!) If you have never had a good old lunchbox ham and cheese sandwich with fresh mint, you need to try it ASAP! Then you will know what I’m talking about! The herb’s fresh and aromatic flavor along with its cool aftertaste turns this ordinary sandwich to something special. With that being said, I have only had it with mayo and like the combo so much that I never bothered to try it with other condiments.

My three taste testers (my daughter, her boyfriend, and my son) all gave this gnocchi dish a thumbs up. They all felt that the mint was a wonderful twist.



As expected, my picky husband, who is not a fan of peas or cream/cheesy sauces, sat out on this one. Despite knowing the answer, I asked him if wanted to sample on two separate occasions. As expected, the answer for both was “not right now” which translates to “not gonna do it” in husband language. Can read him like a book I tell ya 🙂

ONE SKILLET HAM AND PEAS GNOCCHI WITH MINT

One Skillet Ham and Peas Gnocchi with Mint

INGREDIENTS:
1 tbsp. olive oil
1 cup chopped onion
3/4 to 1 lb. diced ham
1 tbsp. chopped garlic
1 2/3 cup milk
5 oz. reduced fat cream cheese or Neufchatel
1/2 tsp. salt
1/4 rounded tsp. black pepper
1 (16 oz.) pkg. potato gnocchi
1 cup frozen peas
1/4 cup lightly packed fresh chopped mint
1/2 cup shredded cheddar, Monterey Jack cheese, or American

 
 

INSTRUCTIONS:

Add olive oil to a large preheat a large skillet on medium heat. Add onion. Sauté for 3 minutes. Add ham and garlic. Cook for 2 minutes, stirring frequently.
Add milk, cream cheese, salt, and pepper. As the cream cheese melts, use a whisk to gently smooth out lumps. 
 

Add gnocchi and peas. Turn heat up slightly to medium high. Gently break apart clumps of gnocchi with a wooden spatula or spoon. Immediately reduce heat to medium low or a simmer when the sauce begins to boil. Cook for 3 minutes or until gnocchi becomes soft and fluffy, stirring occasionally. Add mint and cheese, stirring until cheese melts. Remove from heat. Allow to sit for a few minutes before serving to allow sauce to slightly thicken.

Makes 4 servings.

  2. This is heavenly! Gnocchi and a creamy sauce? Wow. I was just thinking that an herbed cheese would be good, also. I make my own (I call it faux Boursin) but I’ve added Boursin to cream before and it’s good. Oh heck, any cheese would be good in this!!!

  18. Mint with chocolate rules! During the summer, one of our favorite ways to use mint around here is for mojitos, hee hee. I wouldn't add mint to most of my pasta dishes but it works well in this one 🙂
