Parmesan Bacon and Pickle Bites

These Parmesan Bacon and Pickle Bites are a flavor blast. The bite-size pizza crust is glazed with honey mustard, topped with pickle, wrapped in bacon, and coated with grated Parmesan! They are great for game day and parties!

Parmesan Bacon and Pickle Bites

Without a doubt, these bacon and pickle bites are pickle-ly, cheesy, bacony, and a whole lot of yum! They are perfect for game nights, parties, binge-watching on the couch, or as an appetizer.

I have made them with two different kinds of pickles. You can choose whichever you like. Option 1 is dill pickle, which makes the bacon bites salty, dilly, briny, and bold in flavor. Option 2 is bread and butter pickle, which offers a different flavor profile. Its tangy sweetness adds a nice balance to the saltiness of the bacon and grated cheese. Both options are completely addicting!!

These little bites are sure to be a crowd-pleaser. The first time my son had them, he gave me strict orders not to share the batch with anyone. I knew immediately that they were a sure hit.

Ingredients needed:

  • Pillsbury refrigerated pizza crust (this is not a sponsored post)
  • Bacon—regular cut
  • Honey mustard—any store-bought variety
  • Pickles— baby dill or bread and butter
  • Grated Parmesan cheese—no need to go fancy. Pre-shredded store-bought will do.

Recipe Highlights:

  • Cut pizza dough into rectangles. Brush on honey mustard.
  • To assemble: Place a piece of dough onto a bacon slice. Add a pickle slice and wrap bacon over the pickle.
  • Place wrapped bacon bites onto a prepared baking sheet.
  • Bake at 375° F for 22-26 minutes, turning over once 15 minutes into baking time.
  • While bacon bites are hot but cool enough to handle, coat them with Parmesan cheese. Serve immediately.

There is no exact science to this recipe. I’ve provided quantities and yield amounts, but they are just guidelines. You can freehand and add as much or as little as you want. I suggested cutting the pizza dough into 1 x 2-inch pieces, but you can go smaller or larger. Doing that, of course, will change the yield quantity. Likewise, you can adjust the size of the bacon strips, but it will change the amount you’ll need.

Can these be made ahead?

Fresh baked is always best but for convenience, assemble and bake the bites ahead of time. Slightly underbake a minute or two. Reheat them at 350° F in the oven until heated through and the bacon is crisp.

You could also make ahead freeze. To reheat, apply the same guidelines as mentioned above to reheat. Just so you know, it will take a couple of minutes longer to heat through.

How to store:

  • Refrigerate—store in an airtight container for up to 5 days.
  • Freeze—store in an airtight container or ziplock bag for up to 3 months.

Helpful tips:

  • Coat the bites with Parmesan while they are hot. The bacon fat helps to make the cheese stick. If the cheese doesn’t stick, dab the bites in the bacon fat from the baking sheet. Or spray lightly with cooking spray, then immediately coat with Parmesan.
  • The bottom of the bites brown more quickly than the bacon on top. Bake on the 2nd highest oven rack position for even browning. You can bake on the middle rack, but make sure to flip the bacon bites over midway through the baking period.

  1. Preheat oven to 375 degrees F.
  2. Unroll pizza dough. Shape into a rectangle. Trim off excess with a pizza cutter. Cut into 36 1 x 2-inch rectangles.
  3. Brush on honey mustard.
  4. To form bacon bites: Place a slice of bacon on the work surface. Place a piece of pizza dough in the center. Add pickle. Fold the bacon over the pickle. Continue assembling the remaining bacon bites.
  5. Place bacon bites onto a large baking sheet coated with cooking spray. Bake on the 2nd rack from the top for 22-26 minutes, turning over bites 15 minutes into baking time. Done when bacon is brown and crispy.
  6. Remove from oven. Coat bites with Parmesan cheese when they are cool enough to handle but still hot.
  7. Method 1: Place Parmesan cheese into a small bowl. Add 1-2 bites at a time and gently press on Parmesan cheese.
    Method 2: Place Parmesan cheese into a large plastic storage bag. Add a handful of the bites into the bag. Gently shake to coat. Serve immediately.
  8. Makes 36 bites.

Notes

  • You can cut the pizza dough according to the size specified or to your preference. Doing so will increase or decrease the yield amount. You can also lengthen or shorten the bacon size. Keep in mind that it will change the number of whole bacon strips you need.
  • The bottom of the bites brown more quickly than the bacon on top. Bake on the 2nd highest oven rack position for even browning. You can bake on the middle rack, but make sure to flip the bacon bites over midway through the baking period.
