Lobster Pizza

A lobster roll in the form of a pizza is a treat! This pizza is pure indulgence with a generous amount of lobster, lettuce, tomato, and a mayonnaise-based spread.

Lobster Pizza

A few weeks back, the nice folks at LobsterAnywhere sent me some complimentary colossal lobster tails, which I turned into scrumptious Lobster Tails with Bacon-Wrapped Asparagus. Along with the lobster tails, I also received a package of lobster meat. It sat in my freezer for a few weeks until this weekend when I decided to use it for pizza. If you ever want to make your lobster work for you, pizza is the way to go. With just a little bit, you can feed a small crowd. The package I received was 16 ounces. With that, I could make two 13-inch pizzas. It’s a great way to stretch the lobster to maximize the number of servings.

This pizza is my twist on the basic New England lobster roll. My husband makes awesome ones, and this is my interpretation of his sandwich in the form of a pizza. To start, the pizza dough is baked at 500 degrees F on a baking stone. If you don’t have one, a metal baking pan will be fine.

I used pizza dough, ready-made form my local pizza shop. But if you want to make your own dough, I included a link to one I have made in the past (it’s really good) within the recipe. The pizza crust is brushed with melted butter when it comes out of the oven. It is then topped with a mayonnaise-Miracle Whip-based sauce. Using both ingredients is a must. I feel that the mayo alone is too rich, so the Miracle Whip balances it out beautifully with its slight tang and sweetness. Shallot and thinly sliced celery complete the sauce as the former adds a refreshing bite, and the latter provides a bit of texture and crunch.

The rest of the pizza is dressed simply with shredded lettuce and finely diced tomatoes. Finally, add the pièce de résistance…butter dipped lobster. Then it’s time to indulge!!

  1. If you have time to bring the baking stone up to temperature, preheat it in a 500° F oven for one hour. If you are not using a baking stone, preheat just before baking.
  2. Spread flour on a work surface. Use your hands to shape and stretch the pizza dough into an approximately 13 ” diameter. Slide the dough onto a large rimless baking sheet or a pizza peel dusted with cornmeal. Slide the pizza dough onto the pizza stone and bake for about 10 minutes or until golden brown. If not using a pizza stone, bake the dough directly on top of the baking sheet.
  3. Meanwhile, add mayonnaise, Miracle Whip, shallot, celery, onion powder, garlic powder, and salt to a small bowl and blend well. Drizzle 3 generous tablespoons of melted butter onto lobster meat in a separate bowl and mix gently to combine.
  4. Once the pizza comes out of the oven, immediately brush it with the remaining melted butter. Allow the crust to cool slightly. Spread the mayo mixture onto the crust. Add lettuce, tomatoes, and lobster.
  5. Makes 4 servings.

  3. Oh my goodness I think my heart just stopped! Lobster on pizza? My dreams are made of this. I know a lot of people tend to believe that it's nearly blasphemous to use lobster in such ways (a lot of people curl their lip at me when I talk about this one amazing lobster mac and cheese I had two summers ago). I've always been more partial to scallops myself, so I love using lobster in crazy ways!

  4. Crazy good ways, Dana! My favorite way to have lobster is drowning in butter, but I'll eat it in any shape or form. Blasphemous for some is really good eats for the rest of us, right? I was just at a restaurant tonight that served lobster and crab mac and cheese. I almost got it, but for some bizarre reason, meatloaf and mashed potato was calling my name (I know, know, how lame is that?).

Since you are there in beautiful, warm California and I am here, freezing and buried under 100+ of snow in the Northeast, I can't feel THAT bad for you (just kidding!). I know what you mean: my parents are in AZ and it is a huge luxury for them to get good Maine lobster. I have been so impressed with LobsterAnywhere. They are worth checking out.

  14. Putting lobster on a pizza is a new idea for me. I can see why the sauce would have to be different to really let that flavor ride through. Have you heard of any restaurants doing something like this?
