Instructions

  1. Peel, core, and slice the apple into wedges. Slice each wedge into 1/8-inch thick pieces. Add sugar, cinnamon, and flour. Combine.
  2. Place the butter in a small microwaveable plate. Microwave for 20 seconds to melt. Set aside.
  3. Meanwhile, spray a 1-cup capacity microwavable ramekin or mug with cooking spray. Add the apple mixture. Mound apple as high as you can without overflowing. They will cook down. There may be some excess depending on the size of the apple.
  4. Place the apple mixture in the microwave. Cook for 2 1/2 minutes.
  5. While the apple cooks, add the remaining crumb topping ingredients to the melted butter. Mix to form wet coarse crumbs. Spread the crumbs into an even layer on a paper or microwaveable plate.
  6. After the apple has cooked for 2 1/2 minutes, place the crumb topping plate beside the apple filling. Microwave for 30 seconds. Stir the crumb topping to prevent the sugar from burning. Cook one more cycle for 30 seconds. Stir crumb topping. Microwave for 20 additional seconds (30 seconds may be too long, and the sugar in the crumb topping may start to burn). The crumbs will harden as they cool.
  7. Remove the content from the microwave. Place crumb topping over apple and serve (with a dollop of vanilla ice cream, optional).

Notes

  • If you use a tart apple, increase the granulated sugar slightly to offset the tartness.
  • Adjust the cooking time to suit your personal preference for the firmness of the apple. Also, cooking time may vary depending on the variety of the apple, as some are softer than others. The type of apple used and the cooking time in this recipe cook the apple until tender but with a slight bite.
  • The cooking time is based on a 1000 W microwave oven and may vary depending on the power of your microwave.

  17. This was a little sweet for me but didn’t stop me from eating it all (my husband had 3 bites). My apple may have been a sweet variety, not sure which kind it was. Maybe I’ll toss the slices in a little lemon juice first next time & add a smidgeon more cinnamon. Overall, not bad for microwave.

    1. Thanks for trying the recipe! It could be the apple you used. If you decide to make it again, try reducing the amount of sugar slightly in the recipe to suit your taste 🙂
