The unexpected flavor of mint infuses springtime freshness to One Skillet Ham and Peas Gnocchi with Mint. With minimal prep and less than 15-minutes to cook, this dish is a welcomed addition to any busy weeknight menu, springtime or anytime!
As luck would have it, I found fresh mint left over from summer rolls I had made (they were yummy, thank you very much)! It was exactly what the gnocchi needed to add that extra breath of freshness. I pulled a switcheroo, so out with the chive and in with the mint!
As expected, my picky husband, who is not a fan of peas or cream/cheesy sauces, sat out on this one. Despite knowing the answer, I asked him if he wanted to sample on two occasions. As expected, the answer for both was “not right now,” which translates to “not gonna do it” in the husband’s language. Can read him like a book, I tell ya 🙂

Add gnocchi and peas. Turn the heat up slightly to medium-high. Gently break apart clumps of gnocchi with a wooden spatula or spoon. Immediately reduce heat to medium-low or simmer when the sauce begins to boil. Cook for 3 minutes or until gnocchi becomes soft and fluffy, stirring occasionally. Add mint and cheese, stirring until cheese melts. Remove from heat. Allow to sit for a few minutes before serving to allow the sauce to slightly thicken.

LOL, I can't believe your husband doesn't like creamy dishes! That's my boyfriends favorite kind of dish. Anyways, I love the freshness added by the mint here, what a great spring recipe!
This is heavenly! Gnocchi and a creamy sauce? Wow. I was just thinking that an herbed cheese would be good, also. I make my own (I call it faux Boursin) but I’ve added Boursin to cream before and it’s good. Oh heck, any cheese would be good in this!!!
Thank you Danielle! My husband is definitely a challenge to feed and takes all the fun out of eating sauces.
Thank you, Mimi! Herbed cheese would be fantastic! I really have to practice restraint when eating Boursin. I love it so much!
My husband is also not a fan of peas. I like them very much. That creamy sauce looks incredible! The addition of fresh mint is a wonderful idea; perfect to go with peas and ham.
It is a bit of a challenge to feed my picky husband. He is such a food party pooper sometimes (haha). I'm glad that one of us is able to feed our husband creamy sauces 🙂
It looks so creamy and comforting… I've a cold, the weather is cold. I definitely need these! 🙂
love how creamy and cozy this looks!!! and the mint sounds perfect to help balance some of that richness (:
Thank you. I hope you feel better soon!
Thanks Heather!!
Well if your hubby doesn't like, that only means more for you….or you could send some to me 😉 Looks delicious! I happen to love creamy based sauces and the combo is scrumptious, Thao! Great move with the mint! Happy weekend 🙂
Hubby is my picky child when it comes food. More for me is always good but I wish I would share some with you! Have a wonderful weekend!
I just happen to have leftover ham from the weekend, as well as gnocchi…now the only thing I need is the mint! Looks delicious!
That's great, Katherine! Sounds like the perfect time to try this dish out. I hope you had a wonderful Easter!
How amazingly creamy, how can anyone not want to try it!! I would love two plates of it right now. 🙂
I love mint and I don't use it enough in savory preparations–it's rare that I think to pair it with anything other than chocolate :). But this sounds delicious!
Thank you Adina! I should show this to my husband to prove that he is being unreasonable. Hahaha!
Mint with chocolate rules! During the summer, one of our favorite ways to use mint around here is for mojitos, hee hee. I wouldn't add mint to most of my pasta dishes but it works well in this one 🙂
YUM! I just made a ham and we have plenty of leftovers. Thank goodness creamy sauces are one thing my picky husband will eat 🙂
I wanna know what your secret is for getting him to eat creamy sauces! It's no fun making 2 different meals all the time. Get this: Mine won't eat things everybody loves but he'll eat liver and onions. Go figure!
You seriously just came to my rescue! Mint is currently running rampant in my garden so I'm constantly looking for ways to use it up! I adore mint and gnocchi and my husband loves peas so this recipe is a winner! Pinning!
I'm so glad this recipe fits perfectly into your needs! I like growing mint but they do tend to take over. Two main things we use mint for at my house are green drinks and mojitos…you know, it's all about balance 😉
