The chocolate cookies are soft and dense, just the right texture for an ice cream sandwich. They are sweetened with agave nectar and applesauce, and there are no eggs or butter. Despite what you might think, these cookies are tender, moist, and delicious, even without the ice cream.
When it comes to ice cream flavor, anything goes…chocolate, vanilla, chocolate chip, pistachio, or strawberry. In keeping with the light and healthy theme, go with no-fat ice cream, no-sugar ice cream, or frozen yogurt. Sherbet is great as well! Go lighter for a guilt-free dessert and heavier for more indulgence.
For the finishing touch, roll the sides of the ice cream sandwich in sprinkles, coconut flakes, nuts, and mini chocolate chips. For this skinny dessert, go as light or heavy as you like.

Ice Cream Sandwich Skinnys allow you to indulge without all the guilt. The easy chocolate cookies are made from scratch and entirely hand-mixed. Customize the sandwiches with a lighter, healthier ice cream variety. Keep some in your freezer to satisfy pesky snack attacks!

- Preheat oven to 350° F.
- Blend wet ingredients using a wooden spoon. Add dry ingredients and blend until well incorporated. Place on a greased cookie sheet using a small ice cream scoop or a spoon. Flatten cookies to about 1/4 inch thick using a greased palm. Bake for 7 minutes. Transfer to a cooling rack and allow to cool.
- Allow the ice cream to sit at room temperature for a few minutes to slightly soften. Place a scoop of ice cream on one cookie. Sandwich with a second cookie. Roll the edges in a decorative coating, optional. Repeat until all of the cookies are gone. Freeze for at least 1 hour.
- Makes about 7 ice cream sandwiches.
