When I get a cold, it lasts for an excruciatingly long period…about 3 weeks from the first tickle in my throat to the last tissue wipe. It really irritates me when other people overcome their colds within 5-6 days. It’s just not fair!! So, I work hard to avoid getting sick. One of my defenses is garlic. During winter I try to eat as much of it as I can because of its health benefits, including immune-boosting properties. The one food item I can add a whole lot of garlic into is garlic pita chips. They are cheesy, garlicky, salty, savory, crunchy, and delicious!
Once again, I rely on my little secret weapon, anchovy, to elevate the flavor. It dissolves into the butter and oil mixture and imparts a slight piquantness and interest. I like to add two to my own pita chips, but the recipe below gives you the option of using one or two. Use two if you like it as much as I do! Don’t worry about using only a fraction of anchovies in a can. I freeze the remaining in a zip lock bag where they are ready to use at a moment’s notice. No wasted food here!
Whenever I get the munchies and crave Doritos, chips, or Cheetos, having some of these pita chips in the freezer really helps. Even though they are not considered healthy foods, these pita chips do have the health benefits of olive oil, fresh garlic, and red pepper flakes. You are not going to find them in the junk food I originally craved for. And you know what?— the pita chips are so packed with flavor, eating just a couple satiates my munchie attack. It spares me the guilt of mowing on a bunch of junk food!

- Pastry brush for applying garlic butter to pitas.
- Baking sheets for baking pita chips on.

Cheesy Garlic Pita Chips
Description
These Cheesy Garlic Pita Chips are crispy and delicious. They freeze well and reheat quickly. Make a lot of extras to keep on hand for a spur-of-the-moment appetizer or snack.

Instructions
- Preheat oven to 350 degrees F.
- Place pitas directly on the middle oven rack. Bake for 4 minutes. Remove from oven and place on cooling racks.
- Place olive oil, butter, salt, anchovy, and red pepper flakes in a small saucepan on medium heat. Cook, stirring frequently, until butter is melted and anchovies are dissolved. Add garlic. Cook, stirring for one minute. Remove from heat.
- Spoon about 1 tablespoon of the garlic butter mixture onto each pita. Use a brush to spread evenly over each pita. Cut each pita into 8 slices. Brush the excess butter from the saucepan onto the surface of two baking sheets. Place pita slices on baking sheets. Place in oven and bake for 8 minutes.
- Remove from oven and sprinkle Parmesan on each slice. Return to oven (if baking on two separate racks, switch baking on racks to ensure even baking). Bake for about 6 additional minutes or until the pita is golden brown and crispy.
- Remove from oven. Allow to cool on a baking sheet.
- Makes 32 pita chips.

Anchovy! I love it. I use it in stews and sauces all the time, but I hadn't thought about adding it to pita chips.

I like adding anchovies to my sauce and soup bases too! They all start with olive oil, garlic, and red pepper flakes. I first made the pita chips without anchovies, and although it was good, it could benefit from a little zip. Naturally, anchovy came to mind, and it did the job!

I love this recipe, it contains three of my favorite food: GARLIC, anchovies and bread. I am definitely making these. And another way of keeping leftover anchovies: place them in a small, clean jar together with their oil and add extra oil to cover them. They keep in the fridge forever, I always buy a huge can (about 500 g/ 1 pound) and keep them in a large jar in the fridge, I only have to take care that the anchovies are always inserted in oil. It takes months to consume so many anchovies and they never went bad.
