Strawberry Grape-Nuts Yogurt Breakfast Popsicles

Plain yogurt, fresh strawberries, grape-nuts cereal, honey, and mini chocolate morsels are in these light, healthy, and nutritious popsicles. They are full of goodness and are a perfect guilt-free summer breakfast or snack for children and adults.

If you have been following this blog, you know that I am enjoying a little R&R this week. I was going to skip a post, but this little blog and you are always on my mind, so much so that I’m taking a little time off from my little time off to share a new post. But after this blogging business, I will immediately be getting back to relaxation, spirited beverages, highly caloric food, and good company.

My family is spending this week with my sister and her husband. They flew in from Colorado for their annual visit which we always look forward to. They are huge seafood lovers, and when they are here, it’s a week of endless seafood โ€” all day, every day (you can see a sample of one of our feasts on my Facebook and Instagram pages). Since Colorado is not exactly the land of plenty when it comes to seafood, my guests take advantage of every opportunity to eat it when in New England. My husband, children, and I are always there to support their endeavors and happily partake! Hee hee.

Strawberry Grape-Nuts Yogurt Breakfast Popsicles

My sister and brother-in-law are building a house in the mountains in Colorado. This is the second one that they will have built in the mountains…by themselves…from the ground up. It all starts with clearing the land, followed by digging for well water, which is one of the few things that is outsourced. All the subsequent milestones: laying the foundation, framing, roofing, siding, windows and doors installation, is a product of their blood, sweat, and tears. This is followed by more blood, sweat, and tears to install the  kitchen and bathroom, plumbing, flooring, and most of the electrical. In the end, the result is a gorgeous home and the pride of creating something magnificent on their own.  

Get this! They plan to build another one down the road. Crazy people!! I tease them about getting their own TV show. Have you seen the show Fixer Upper on HGTV? When I first saw it, I couldn’t believe how similar my brother-in-law is to Chip Gaines. I swear they are long lost brothers! Not only do they look like they could be brothers, their mannerism and personality are the uncannily alikeโ€”goofy, playful, spontaneous, slightly reckless, with a tendency for some โ€did he really do that?โ€ moves.

Well, I guess I rambled long enough, so I’ll move onto the popsicles. First of all, is mid-August too late to post a popsicle recipe? It’s not, right? Summer is still with us, so a cool, refreshing popsicle is always in order. And when is it appropriate to eat popsicles for breakfast? When it has low fat yogurt, grape-nuts, strawberries, and honey! It is wholesome and healthy and gets you off to a good start in the morning.

For this breakfast popsicle, plain regular or Greek yogurt can be used. Honey adds a touch of natural sweetness. Of course, you can adjust the quantity to suit your desired sweetness level. I also added mini chocolate morsels…because chocolate makes everything better (and it adds more sweetness). But if you want to keep it entirely heathy, omit the chocolate morsels. It won’t hurt my feelings. 

After 4 days of eating like I had the metabolism of a 20 year-old, these healthy popsicles were a welcoming healthy reprieve. As for the remainder of the week, I’ll continue to eat like the calories don’t count, but next week is payback via a diet consisting of rabbit food โ˜น๏ธ

Description

Instructions

  1. Use a fork to macerate strawberries in a bowl. Add the remaining ingredients. Stir to blend. Divide equally among four 3-ounce popsicle molds. Freeze until solid, ย at least 4 hours. ย Run under warm water to unmold.
  2. Makes 4 servings.

And to be honest, I don't eat the grape-nuts as cereal…but I love to make grape-nut pudding and these popsicles with them.

  9. Yay to summer and spending lots of time with family!! The seafood is the best here (especially the scallops YUM!) Saw your lobster photo the other day and was wondering if you go them at Market Basket. We bought 6 there last week for just the 2 of us because they were on sale for $4.99lb!! WOOOHOOO to living in New England…except in the winter. lol ๐Ÿ™‚

  10. I totally agree on both accounts, Karrie โ€” seafood is the best part of living in NE and winter is the worst! Yes, we got our lobsters at MB for $4.99 lb! Woo hooo!!! There was a 4 hour wait but it was worth it!! We had them for dinner but it didn't stop us from pigging out on seafood for lunch. My brother-in-law ordered steamed mussels and 2 double stuffed lobster rolls (making the most of his seafood eating opportunity)! I'm impressed that you liked grape nuts as a child! Lucky Charms, Fruity Pebbles, and Corn Pops were more my speed. I hope you'll like the popsicles! I use grape nuts mainly for grape nut pudding but these popsicle have become my second favorite way to use them.
