One thing that is not complicated is this stew. It is a delicious and comforting meal that can easily be put together after a long day. I take advantage of a couple of convenience items to make this stew a breeze to prepare. I love packaged gnocchi. It’s a wonderful thing! It cooks literally in three minutes, perfect for a quick meal. I also like to take the lazy way out with the kale. Fresh chopped packaged kale is a time server. It might cost a little more than chopping my own, but for convenience and speediness needed during the weeknight, it is so worth it.
1 cup chopped onion
3/4 cup chopped red bell pepper
2 large cloves garlic, chopped
1/2 teaspoons black pepper
1 teaspoon Italian seasoning
8 cups lightly packed chopped kale
1 cup corn
1 (14.5 ounce) can chicken broth
1 pound gnocchi
1/3 cup heavy cream
salt (to taste)

And I have to admit I've never managed to make decent homemade gnocchi, I haven't found that perfect recipe, something is always missing.
Yes, this year need to be better! I have never made my own gnocchi, and with packaged ones that are so tasty, there was little need for me to make my own. Funny how the homemade ones you tried didn't measure up. I hope you'll find the perfect recipe one day!
My husband doesn't eat pork. Would chicken or beef be good in this stew??
