This is one of those posts that required two photo sessions in order to obtain satisfactory results. Sometimes I try so hard to be prepared and organized and it ends up backfiring on me anyway. You have had that happen to you? I had prepped the individual components of the slider ahead of time so that I could have an efficient, speedy photography session when the opportunity arrived. What ended up happening, as it inevitably does, was I forgot an ingredient and did not realize it until after the photoshoot was over. This time, I had precooked the bacon and hid it in the vegetable crisper so that it wouldn’t be eaten by my family on their routine pillage of the fridge. (They don’t usually look in the vegetable bins for goodies to quell their ravenous appetites.) Unfortunately, the bacon was hidden so well that it was unnoticed by all, including myself, until after I did the first photo shoot.
It wasn’t until I saw Ree Drummond cook bacon on her TV show that I realized I had left out the bacon in my sliders. I then dragged everything back out and did a second shoot so that there would also be a slider with visible bacon in it. I’ll let you figure out for yourself which picture was in the first photo session and which was in the second.
I used sweet dinner rolls for these sandwiches, King’s Hawaiian Savory Butter Rolls, to be exact. If you don’t have access to this brand, any sweet dinner roll would be fine. The slider was filled with thinly sliced deli chicken and ham, bacon, Monterey Jack cheese, arugula, and a sweet chili/crushed pineapple spread. I used arugula because its slightly peppery flavor complimented the sweet and spicy pineapple spread and saltiness of the meat. If you don’t like arugula, scallion would be a great substitute.
To make the sandwiches, I assembled the meat and cheese layer first. It was then baked to heat the meat and melt the cheese. Once this was done, it was placed on the bun, and the remaining components were added. The picture below illustrates how I folded the chicken and ham to fit the size of the bun, but do it any way you want.
The bacon was hidden and forgotten about in the crisper in my refrigerator—there should have been strips of it tucked in between the layers of chicken and ham in the picture below. Ooopsie! These little bundles were then baked before placing on the buns.
Once assembled, you get this scrumptious looking little sandwich. Yum! How good it is!

Instructions
- Slice each roll in half horizontally and set aside.
- Place crushed pineapples in a strainer and press to squeeze out liquid. Drain well. Transfer to a small saucepan on medium heat. Stir in chili sauce and allow to heat up, reduce to warm.
- Fold each slice of chicken using this method: Working on the longest edges, fold one side in towards the center. Take the opposite side and fold it towards the center. The slice should now be oblong-shaped. Fold this oblong into thirds to form a square packet. Place on a baking sheet. Place 3 pieces of bacon on the chicken. Repeat folding the remaining slices of chicken, placing 3 pieces of bacon on each.
- Turn oven to low broil.
- Fold the ham slices in the same manner as the chicken and place them over the bacon. Top each stack with 1 slice of cheese. Broil a few minutes until the cheese melts.
- Working in assembly line style, place each meat/cheese packet on the bottom half of each roll. Spread the pineapple mixture on the top half of each roll. Place a few arugula leaves over the cheese. Cover with the top half of the bun. Serve immediately.
- Makes 12 servings.
