Chicken Salad Sandwich with Garlic and Herb Cream Cheese

Chicken Salad Sandwich kicks a classic favorite up a notch! The chicken is infused with creamy, garlicky, and herbaceous Boursin cheese. These sandwiches are a great way to use leftover chicken.

We had our new next-door neighbors over for dinner for the first time last weekend. We sat, talked, ate, and drank for over five hours. The conversation flowed smoothly. Naturally, one topic discussed was unpacking. We all agreed that it was the 1,734th favorite thing we like to do. Food, of course, was the focal point of the night. Since I planned a prime rib dinner feast, I kept the appetizer simple: crackers with store-bought garlic and herbs spreadable cheese. A good time was had by all.

The following morning, with food still on my mind, I incorporated the smooth, creamy cheese into a dish. The chicken salad seemed like a perfect application for it. After I whipped up the sandwiches and had a photoshoot, I immediately served my creation for the day’s lunch. I’m happy to say my husband and kids approved. Yay!

What’s great about them is you can serve them as regular-sized sandwiches for lunch or dinner, or make them slider-sized for party food and an appetizer.

Chicken Salad Sandwich kicks a classic favorite up a notch! The chicken is infused with creamy, garlicky, and herbaceous Boursin cheese. This sandwich is a great way to use leftover chicken.

Ingredients

• 3 cups chopped  cooked chicken
• 3/4 cup garlic herb spreadable cheese (I use Boursin or Alouette)
• 1/4 cup plain Greek yogurt
• 1/3 cup thinly chopped celery
• 1/2 tsp. salt
• 1/4 tsp. pepper
• 6 slices tomatoes
• 6 lettuce leaves
• 6 small bulky rolls or buns

Instructions

1. Combine the first six ingredients. Mix to blend.
2. Assemble sandwiches with about 1/2 cup of chicken salad, 1 tomato slice, and 1 lettuce leaf per bun.
3. Makes 6 small or 4 regular-size sandwiches.
