I don’t know anyone who doesn’t like monkey bread. The fluffy and tender bit-sized dough combined with cinnamon sugar, butter, brown sugar, and chopped nuts is divine! It’s always a challenge not to dive right into the cake once it’s finished baking.

Monkey bread is typically baked in the oven, but the microwave version is equally delightful and allows for quicker enjoyment!

As Mother’s Day approaches, remember that this delightful treat is easy for anyone to prepare for Mom. No baking skills are required to make this sweet pull-apart bread, making it a kid-friendly recipe that they can enjoy creating for her.

Super simple to prepare—although making the dough from scratch is possible, it’s not necessary—unless you prefer to do extra work! I use Pillsbury biscuit dough, which allows the monkey bread to come together quickly and effortlessly while producing mouthwatering results.

Fast cooking time—oven-baked versions require 35 to 45 minutes to bake, while my microwave method cooks in under 3 minutes! After that, it only needs 4 minutes of browning in the oven.

Only six simple ingredients—a 6-ounce package of Pillsbury buttermilk biscuit dough, butter, brown sugar, granulated sugar, cinnamon, and chopped nuts.

Portion control—the small serving size helps to prevent overeating. This small batch of monkey bread serves 3 compared to the standard 8 to 12 servings.

  • Melt the butter and use a small amount to grease a 16-ounce capacity microwave-safe bowl.
  • Add brown sugar to the remaining melted butter and combine. Add a generous tablespoon to the buttered 16-ounce bowl and one-third of the chopped nuts.
  • Cut each biscuit dough in half, then slice each half into three pieces. Coat each piece with a mixture of granulated sugar and cinnamon.
  • Layer half of the biscuit pieces in the buttered bowl. Then, add slightly under half of the remaining butter mixture and sprinkle most of the leftover chopped nuts on top.
  • Add the remaining biscuits and drizzle with the rest of the butter mixture and nuts.
  • Microwave on high for 2 minutes and 45 seconds, then flip onto a baking sheet and pop in a preheated 450°F oven for 4 minutes to brown.

I can usually find the 6-ounce package of buttermilk Grands at my local Walmart, but if you have the larger size, no problem! Use 6 ounces of what you have, which is equivalent to 5 buttermilk Grands biscuits, and store the rest. Did you know that you can freeze uncooked dough? Yep! Freeze it until you’re ready to use it!

To freeze, lightly grease parchment paper (or aluminum foil) and place it on a tray. Add the biscuit dough and freeze until firm. Next, wrap each biscuit individually in plastic wrap, then place it in a freezer bag or container. Freeze for up to two months.

To defrost, loosen the plastic wrap while keeping it covered to prevent drying out. Allow the dough to thaw in the refrigerator or at room temperature for a couple of hours, then use as desired.

Leftover monkey bread can be kept in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.

It’s best to warm leftover monkey bread before serving. I recommend microwaving it for a few seconds.

  1. Preheat the oven to 450° F. The monkey bread needs to brown for a few minutes after cooking in the microwave.
  2. Place the butter in a small bowl and microwave until it is melted. Pour half a teaspoon into a 16-ounce capacity microwave-safe bowl to lightly grease all sides.
  3. Combine the brown sugar with the remaining melted butter. Mix thoroughly. Add a generous tablespoon of the mixture to the buttered 16-ounce bowl, then add one-third of the chopped nuts.
  4. Take the biscuits out of the package. Cut each one in half, then slice each half into three pieces. In a small bowl, mix the granulated sugar and cinnamon together. Coat each biscuit piece with the mixture.
  5. Layer half of the biscuit pieces in the buttered bowl. Top with slightly under half of the remaining butter mixture and most of the leftover chopped nuts.
  6. Add the remaining biscuits, then cover them with the remaining butter mixture and nuts. Make sure to pour some of the butter mixture around the edges.
  7. Place the bowl in the microwave. Cook on full power for 2 minutes and 45 seconds.
  8. Let it cool for 1 minute, then cover it with a small greased baking sheet. Invert the bowl and the baking sheet while keeping the bowl steady to unmold the monkey bread. Be gentle to prevent the pieces from breaking off. Bake on the upper rack of the oven for 4 minutes to achieve a golden brown color, turning the baking sheet 180° after two minutes for even browning.
  9. Makes 3 servings.

Notes:

  • Cooking times may vary based on the material and shape of your bowl. Additionally, shallow bowls generally heat food more evenly than deep bowls.
  • The wattage of your microwave will also affect cooking time. This monkey bread was made in a 1000-watt microwave. You may need to adjust your cooking time based on your microwave’s power. Remember, you can cook for a few extra seconds if the monkey bread is undercooked, but overcooking it cannot be remedied.
