Pistachio Brookie Bars combine fudgy chocolate brownie and pistachio cookie dough, making them absolutely irresistible. Using brownie mix, these bars are quick and easy to prepare.
Although I have never taken a genealogical DNA test, I can say with 99.9% certainty that there isn’t one ounce of Irish ancestry in my body. I’m Asian through and through. But on St. Patrick’s Day, I’m Irish at heart.
One of my favorite things about St. Patrick’s is the opportunity to eat corned beef and cabbage. I rarely make it throughout the year because my son and husband are not huge fans of the dish. So, mid-March is my opportunity to get my share of the yummy dish! Can’t wait!!
A celebration isn’t complete without dessert. These bars combine fudgy dark chocolate brownies with pistachio pudding cookies. Using a store-bought brownie mix makes these brookie bars wonderfully semi-homemade, offering a delicious taste while also reducing preparation time and cleanup compared to making brownies from scratch.
With that being said, the cookie component is made from scratch. Instant pistachio pudding mix is added for flavor and color. The combination of brownie and cookie makes for one delightful chocolaty, pistachio-ie treat.
If pistachio isn’t your thing, you can easily substitute it with another flavor of pudding mix. Options include strawberry, chocolate, vanilla, cheesecake, red velvet, and caramel. There are so many choices! While you may not find every variety at your local store, they are available for purchase online—which is my favorite way to shop!
By the way, this recipe is entirely hand-mixed. A whisk and a sturdy spatula are all you need, but you can use an electric mixer if you wish.
I know it’s still a few weeks away, but whatever you are doing or not doing this St. Patrick’s Day, I hope you will do it with these brownies in hand!

Instructions
- Preheat oven to 350 degrees F. Spray the bottom of a 9″ x 13″ baking pan with cooking spray or line with parchment paper.
- Whisk butter, egg white, and sugar until smooth in a medium mixing bowl. Add almond extract and food coloring (optional). Whisk to blend.
- Combine flour, pudding mix, salt, and baking powder in a small bowl. Gradually mix half of the flour mixture into the wet. Add milk. Mix. Gradually add the remaining flour mixture. Mix to combine, switching to a rubber spatula to mix if needed. Set aside.
- Add brownie mix, water, oil, and eggs into a large mixing bowl. Whisk about 50 times to combine. Pour into the prepared baking pan.
- Drop cookie dough by spoonfuls on top of the brownie batter.
- Place the baking pan in the middle rack. Place a large foil on the upper rack to cover the top of the baking sheet. This prevents the green from discoloring during baking. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out almost clean. Allow to cool completely.
- Refrigerate for at least 30 minutes before cutting for a clean cut.
- Makes 16-20 bars.

I was just trying to come up with something different to take to a St. Patrick's Day party and now I see your dessert. Thanks for the inspiration.
I AM Irish, so I guess that means I should eat ALL of the green desserts? Either way, I'm eating this! Great flavour combo, Thao!
There are totally cute–and you are right, perfect for St Pat's!
It made my day to know that this inspired you, Karen! Have a great weekend!!
You're allowed to eat green and any other colors you want, Katherine! ???? Have a great weekend!!
I'm glad you think so too, Inger! Happy weekend to you!!
How pretty! My children would love these brownies, even though St. Patrick is fully unknown around here. 🙂 I would not even know about it myself, if I wasn't in this blogging business. 🙂 🙂
We do learn a lot form this blogging thing…I learn new things from yours all the time 🙂 I'm no expert on St. Patrick's Day, but you don't have to know anything about St. Patrick' to enjoy these brownies. I'm glad your boys would like them!
Why is there a slash after the 1 in 1 cup sugar? Is that supposed to be 1/2? 1/3? 1/4? Or is it correct as it is?
So sorry about the typo! It’s supposed to be 1/3 cup. It’s been updated. Thanks for asking!
