Well hello!! I hope you had an enjoyable Thanksgiving! My family did not have to travel or entertain this year. We had a small, stress-free “just us, no company” day. It was wonderful! My mission today is to avoid all the stores, as I’m not a fan of the Black Friday madness.
The last blog post, Cranberry Banana Pancakes with Coconut Syrup, featured cranberries. Once again, the nuggets of wonderfulness make a return this week. I’ve got to take advantage of cranberry eatin’ season while it lasts. I promise to lay off the stuff next time! But how can you not love them? They add interest and a beautiful pop of color to everything.
The hubs won’t touch these naan pizzas. Why? I’ll put it in three words: cranberries, chutney, and feta. This is not surprising from a guy whose favorite pizza is cheese with extra cheese (but never feta). My son, who is much easier to feed, loves these! I make a version with added chicken for him, which he loves even more. Since this blog tends to be heavy on meat, I decided that going vegetarian for this recipe is a nice change.
These pizzas might be small in size, but they’re big in taste and texture. They get their saltiness and creaminess from Monterey Jack, while the feta interjects tanginess, saltiness, and a crumbly texture. The homemade apple chutney provides a mildly sweet and spiced profile. Dried cranberries impart sweetness and tartness, while chopped walnuts add nuttiness and crunch. All of this sits on a foundation of tender, crispy baked naan bread.
Making these pizzas is easy. Layer everything on the naan bread and bake. To make it even easier, skip the homemade chutney and buy jarred. You will be munching away in no time.
Having said that, do try this quick-cooking and simple homemade version. It is essentially a spiced chunky applesauce with warm flavors of ginger, cinnamon, and cloves. You might want to make extra, as it is great on toast, with a cheese board, or all by itself.

For the Apple Chutney:

- To make the chutney, add water, apple cider, and apple to a medium saucepan. Sprinkle flour over the apple. Add salt and spices. Stir. Cover and place on medium heat. Cook for 5 minutes. Stir in honey. Continue to cook until the apples are tender. The total cooking time will be 7-10 minutes, depending on the apple’s original firmness. Remove from heat. Allow to set and cool slightly.
- Preheat oven to 400° F.
- Assemble each naan round as follows: spread on a full tablespoon of chutney. Follow with a few pieces of Monterey Jack, some cranberries, feta, walnuts, and a pinch of scallion.
- Place rounds on a lightly greased baking sheet. Bake until the Monterey cheese is melted, about 7-8 minutes.
- Makes 12 pizza rounds.
