As you can see by the name, this is going to be an indulgent meal for the health-conscious. Some things are not worth the calories and fat, but others are, like this fried rice. Sometimes you have to throw caution to the wind and follow where your taste buds lead you. And where bacon leads, I faithfully follow!
I’m not saying that you should eat this every week or every month, but it is a nice splurge once in a while. Worry about counteracting the side effects later—go for a nice long walk and eat one more light meal during the week.
One ingredient that might be unfamiliar to some of you is fish sauce. Look for it in the Asian aisle in the grocery store. If you have never used it, be warned that it has a pungent smell, but don’t let that scare you. When combined with other ingredients, it makes a terrific marinade, sauce, or dipping sauce. It is essential to give this fried rice its flavor. Trust me, it will not give your dish a fishy taste.
Another item that might be new to some of you is Chinese-style sausage (also known as Lap Cheong). It is firm and slightly sweet. Different brands have sweetness in common (of varying degrees). Unfortunately, it is not universally available, but it can be found in Asian markets as well as online.
The sausage adds a distinctive dimension to the fried rice. Its sweetness balances out the saltiness of the bacon and fish sauce. I don’t recommend omitting this ingredient, but if you can’t get it, don’t worry. Just make yourself a Bacon and Egg Fried Rice.

- Beat eggs and 2 tbsp water. Add 2 teaspoons of oil to a preheated large skillet over medium heat. Pour in the egg mixture and cook until the bottom is set. Flip over and cook for 15 to 20 seconds. Remove from the pan. Place on a cutting surface and cut into small pieces. Set aside.
- Using the same pan, add 2 teaspoons of oil over medium-high heat. Cook the bacon on both sides until browned and crisp. Remove it from the skillet and place it on paper towels. Cut into 1/2-inch pieces. Drain the fat from the skillet into a small bowl, keeping about 1 tablespoon in the pan. Reserve the drained fat.
- Combine fish sauce and 2 tablespoons of reserved bacon fat in a small bowl. Set aside.
- Reduce heat to medium/medium-low. Add the Chinese sausage. Cook for 2 minutes. Add the onion, corn, garlic, ginger, scallion, and bean sprouts. Sauté for 2 to 3 minutes.
- Add rice, breaking up lumps. Drizzle the fish sauce and bacon fat mixture over the rice. Add salt and pepper. Stir until well combined. Cook until the rice is hot. Stir in the bacon and eggs, and cook for 2 to 3 minutes. Serve.
- Makes 4 servings.
