Now that I have sufficiently gorged myself on food over the holidays, it is time to tone it down a bit. The jeans feel painted on, and if I wore my wedding ring, my finger would gasp for breath. Yep! It’s time for lighter, healthier eating.

This part-veggie burger is a great way to start. It is so much better than what you can find in the frozen food section. It is moist, tender, and flavorful. It will totally satisfy a carnivore while adding nutrition with finely chopped veggies. And it’s all fresh!

For the ground beef, choose a lean variety to keep the fat content down. Don’t worry about dryness—plenty of vegetables will keep it moist.

In this recipe, I have added broccoli stems, red pepper, corn, onions, and button mushrooms to my beef burger. But it is so versatile that you can easily customize it to your taste and use vegetables you like. Remember that you should use a mixture of colors for prettier-looking hamburgers. Also, firm veggies, like broccoli stems, require a longer pre-cooking time than softer veggies.

For the bread, use hamburger buns (whole wheat for added nutritional value) if you want the real burger-eating experience. To make the sandwich even lighter, serve it on pita bread or lavash. Any way you want to serve it, be assured that these burgers will be juicy, delicious, and good for you.

  1. Preheat a large skillet over medium heat. Add 2 tsp. oil. Add broccoli. Cook, stirring frequently, for about 4 minutes or until slightly soft. Add diced mushrooms, onions, red pepper, corn, and a pinch of salt and pepper. Cook for 3 minutes, stirring frequently. Remove from heat and allow it to cool.
  2. Combine ground beef, cooked and cooled vegetables, Worcestershire sauce, 1/2 teaspoon salt, 1/4 teaspoon pepper, paprika, onion powder, and garlic powder in a medium bowl. Add an egg or egg substitute. Mix all ingredients thoroughly and shape them into four patties, about 4 1/2 inches wide each.
  3. Preheat a large skillet to medium-high. Add just enough oil to coat the bottom. Add the burgers and cook for 4 minutes. Flip the burgers. Top each with 2 pieces of cheese (use 1 to keep it on the light side). Cook for about 4 minutes (the juices should run clear). Remove from the skillet.
  4. While burgers are cooking, preheat a large skillet over medium-high heat. Add just enough oil to lightly coat the bottom. Place sliced onions on one half of the skillet and sliced mushrooms on the other half. Sauté (keeping the two ingredients separated) until nicely browned, about 5 minutes for the mushrooms and 7 to 8 minutes for the onions.
  5. Assemble burgers with a topping of caramelized onions and mushrooms. Lettuce is optional.
  6. Makes 4 burgers.
