Happy Valentineโs Day!! I hope you have a great day! Itโs past 1:00 a.m., and my husband and I just returned home from a Valentineโs dinner cruise, a thoughtful gift from our daughter. It was fantastic, and the food was superb! The only downside was that it took only two minutes to freeze our faces off walking from the cruise ship back to the parking garage because it was literally sub-zero outside.
During the cruise, I did my duty to help finish off a bottle of champagne and an espresso martini. Now I just want to go to sleep, but before doing so, I have to get this post out of the way. So, if there are a few flubs in the post, you’ll know why! I guess that by the time I’m done, I will have caught my second wind and won’t be able to fall asleep tonight.
I wasnโt sure I would have anything to share with you this week, but I could sneak this one in by the skin of my teeth! Ironically, I had a recipe chosen and even tested it a little bit at the start of the week. However, I needed to scrap it because it was savory and lacked a suitable replacement. Since I havenโt done a Valentineโs Day-type dish, one was in order. Since I havenโt made a Valentineโs Day-themed dish before, that became the goal. After some back-and-forth, I realized that a Strawberry Fool is the perfect solution.
This dessert has English origins. After reviewing multiple sources, I believe it may date back to the 15th, 16th, or 17th century (not the most precise, but whoโs counting?). Since I donโt really need hard facts, letโs just say fruit fools have been around for a while! Traditionally, it was made with custard and stewed fruit, but the modern version uses whipped cream and pureed fruit. Honestly, whoever invented this must have known I love it because I adore sweetened fresh whipped creamโa fact I wish I could indulge in all the time! Fruit Fool mainly consists of a generous layer of whipped cream and a sweetened pureed fruit mixture. To me, that sounds like a magical combination!

Fruit Fool is creamy, fruity, and soft. It has a light flavor with perfect sweetness. The best part is that you can adjust the sweetness level to your liking without compromising the dessertโs essence. Typically, itโs made with mashed uncooked fruit, but I prefer cooking my fruit until the juice reduces and turns syrupy. It’s up to you to choose the method you would like to take.
The pink and white tones in this glass of whipped cream lusciousness are perfect for Valentine’s Day. I topped it off with sugar wafer cookies and candied beads as garnish, adding texture and a light crunch. Even though it is already Valentine’s Day, if you are still looking for a last-minute treat, here is a perfect one. Enjoy!

Instructions
- Cut off the tops and hull the strawberries. Cut into chunks. Add the granulated sugar. Allow to sit for at least 5 minutes. Coarsely mash with a fork. Place in a saucepan over medium heat. Cook uncovered, stirring occasionally for about 8 minutes to reduce the liquid. Spread in a large, shallow dish and refrigerate to cool. Alternatively, skip the cooking and let the strawberries and sugar sit for at least 10 minutes before mashing, then fold into whipped cream.
- Beat the heavy cream until it doubles in volume. Add the powdered sugar.ย Continue beating until stiff peaks form (peaks hold their shape when scooped up). When the fruit is cooled, gently fold it into the whipped cream. Stir just enough to create pink and white streaks. You don’t want to blend it completely into a uniformย color.
- Scoop the whipped cream mixture into 2 large goblets or wine glasses. Slice the reserved strawberries. Top the goblets with crushed and whole sugar wafers, candied beads, and sliced strawberries. Serve chilled.
