These 4-Ingredient Go-To Potatoes are packed full of flavor and crazy simple to make. They are rough smashed potatoes that go well with all kinds of dishes. This is a must have for the weeknight dinner rotation!

I need to give my husband credit for this easy stovetop  potato recipe. He created it a couple of years ago, and we have it regularly. On a busy weeknight when dinner needs to get on the table with minimal effort, these 4-ingredient potatoes are the go-to side. And get this, the fourth ingredient is the water used to boil the potatoes in! The remaining three pack a punch of savory and oniony goodness.

To make, boil the potatoes until tender. Once that is done, drain. Add a generous amount of extra virgin olive along with an onion soup mix packet and rough smash to achieve a combination large chunks and smashed potatoes. This consistency provides such a great mouthfeel. You will end up with the most delicious side dish to complete any meal. My husband really hit this recipe on the nose! It truly is our weeknight go-to potato side dish.


  • Baby potatoes—wash clean. No peeling required.
  • Lipton Golden Onion Soup Mix—provides most of the flavoring. 
  • Extra virgin olive oil— adds moisture, flavor, and good fats.
  • Water—for boiling the potatoes.

As you can see, it doesn’t get much easier. It involves just one pan and a hand held potato masher, resulting in easy cleanup. You will love how 4 ingredients make prep a breeze but deliver a punch of flavor.


  • Wash potatoes. Place in a saucepan and cover by at least 1/2-inch of water.
  • Bring to a boil. Cook until tender. Drain.
  • Place back on buner set to low. Add olive oil and onion soup seasoning packet.
  • Use a potato masher to rough smash potatoes.
  • Serve.

Serve with a simple salad for a truly fantastic meal.

These 4-Ingredient Go-To Potatoes are ideal for the buffet table and backyard cookout as well! There is no dairy, so you don’t have to worry about them sitting out as much as potato salad.


Store leftover in an airtight container for up to 4 days in the refrigerator. They are just as delicious the second time around!

  • Lipton Onion Soup Mix–the main flavoring ingredient for this recipe. You need only 1 2 ounce packet for every 1.5 pounds of potato.
  • Saucepan with lid—this is a 3-quart stainless steel Tri-Ply Clad pan a see through lid. The pan is oven safe up to 500° F and the lid up to 350° F.
  • Potato masher—this heavy duty and stainless steel.
  • Olive oil—I use this extra light tasting olive oil. It has a high smoke point and can be used for frying as well.

  1. Wash and cut any large potatoes in half to get uniform size for even cooking.
  2. Place in a 3-quart saucepan. Add enough water to completely cover the potatoes at least 1/2-inch. Cover loosely and bring to a boil on high. Reduce heat to medium. Cook for 12-18 minutes, or until a sharp pointed knife can pierce through the potatoes without resistance. The length of boiling time depends on the size of your potatoes.
  3. Drain. Place back on the burner set medium low. Add olive oil and onion packet. Smash to desired consistency. Part mashed and part chunks is recommended. Add a splash more of olive oil if potato seems dry. Serve.
  4. Makes 4 servings.
