This ramen noodle dish is great for a busy weeknight. What’s more, it’s super flavorful, with peanut butter and hoisin sauce as the base ingredients. The sauce is creamy and peanut buttery with notes of saltiness, sweetness, and umaminess. There is a mild-medium level of heat, but you can adjust the amount to taste. Don’t omit the Sriracha completely if you don’t like spiciness. Just reduce the amount by half, which will impart a nice warmth to the sauce without adding heat.

Ingredients needed:

  • Ramen noodles—it doesn’t matter what flavor you get…only the noodles will be used. Discard or repurpose the seasoning packets.
  • Peanut butter—use creamy peanut butter for a smooth sauce.
  • Hoisin sauce—is a fragrant thick brown sauce. It’s salty with notes of tanginess and sweetness. It adds complex flavor and umami.
  • Chopped garlic—for flavoring the peanut sauce.
  • Sesame oil—provides a toasted nuttiness backdrop.
  • Sugar—for depth of flavor and to balance the saltiness.
  • Sriracha Chili Sauce—to infuse a mild-medium level of heat. Reduce the amount by half to add warmth without heat to the sauce.
  • Water—for boiling the ramen and for thinning out the peanut sauce.

Recipe highlights:

  • Bring a large pot of water to a boil.
  • In a bowl, combine hoisin sauce, peanut butter, Sriracha, sesame oil, garlic, and sugar for the peanut sauce.
  • Cook ramen in boiling water until al dente, about 2 minutes.

This noodle dish takes only a few minutes to prep and literally less than five minutes to cook. The most time-consuming part is waiting for the water to boil. Take advantage of that time to prep and make the sauce. Note: the total cooking time in the recipe card includes the time it takes to boil water.

Can you reheat the noodles?

This noodle dish is best served immediately. The ramen soaks in the peanut sauce as it sits. Leftover ramen is dryer than just made, and it can become mushy when reheated. Having said that, you can store leftovers. However, the quality will not be as good, and it will not be saucy.

How to store and reheat:

Store refrigerated in an airtight container for 2-3 days.

To reheat, add a tiny splash of water to loosen the sauce. Reheat in the microwave. The time varies depending on how much ramen you have. Do not overheat, as the ramen may become mushy. Alternatively, you can cook on the stovetop on medium heat, stirring frequently until heated through.

  • Large pot with lid—I have this pot. It’s 6-quart and the perfect size for boiling the ramen. It has a nonstick ceramic coating.
  • Colander—for straining the ramen. This is a set of three stainless steel colanders.
  • Kitchen tongs—the silicone tips are gentle on the noodles as well as on non-stick surfaces.
  • Hand whisk and/or rubber spatula— for mixing the peanut sauce. I use both…the spatula for stirring the thick sauce, then the whisk when it thins out.
  • Hoisin sauce—can be found in the Asian aisle of the supermarket. You will get a better deal there, but if you choose to get it online, this is one of the brands I use.

  1. Note: The 20-minute cooking time includes time for the pot of water to come to a boil. Active cooking time is less than 5 minutes.
  2. Bring a large 6-quart covered pot with 3 inches of water to a boil.
  3. Use the pocket of time to make the peanut sauce. In a bowl, combine peanut butter, hoisin, Sriracha, sesame oil, sugar, and garlic. Stir or whisk until smooth. Slowly add water. Whisk until smooth.
  4. When ready to cook, add ramen noodles to boiling water (discard seasoning packets or save and repurpose). Cover and cook until al dente, no more than 2 minutes total (it will continue to cook when the sauce is added). Halfway through cooking, use tongs or chopsticks to turn and loosen ramen noodles to allow for even cooking. Drain well. Return the ramen to the pan. Reduce heat to medium.
  5. Immediately add the peanut sauce, stirring to combine. Cook until heated through, and ramen is at desired doneness.
  6. Serve with a garnishing of chopped peanuts, sesame seeds, and scallion.
  7. Makes 6 main dishes and 8 sides.

Notes

  • Reduce the Sriracha to 1/2 teaspoon to add warmth but no heat to the sauce.
  • This dish is best served freshly made. The quality of leftovers is not as good as newly made. The sauce dries up during storage, and overheated ramen may become mushy. However, if you want to reheat, add a tiny splash of water. Cook on the microwave or stovetop until heated through. The amount of time depends on how much you are reheating.
