The last time I introduced you to my frosting made with pureed cottage cheese, I used it today as the creamy filling for a healthier twist on a classic whoopie pie. But the surprises don’t stop there—the cake itself has a hidden ingredient too: spinach!
(And don’t worry, the next post won’t be lightened up or packed with secret veggies. Promise!)
If you have kids—or grown-ups—in your life who could use a little more green in their diet but won’t willingly eat it, these whoopie pies might just be your secret weapon. Don’t spill the beans! Your “victims”… I mean, loved ones… only need to know the important details: these treats are lower in saturated fat and sugar while still tasting like a delicious dessert.
They’ll never know the difference!

The name Crazy Whoopie Pie comes from the cake component being a modification of the vintage Crazy (or Wacky) Cake. Aside from being moist and delicious, this type of cake is also the simplest to whip up. What makes it unique is that it does not require eggs or butter. Rather, it relies on the chemical reaction between the baking soda and vinegar to act as a leavening agent/
Did I mention that you don’t need a mixer? Just a bit of hand mixing is all it takes. It’s so easy! Try my Chocolate Crazy Cake and see for yourself!
This recipe yields 24 1/2-inch-thick cakes and 12 whoopie pies. If you want thicker cakes, fill the cake pan cavities with a little more batter and bake for a minute or so longer. Just remember, the number of servings will be reduced. Once baked and cooled, fill with the creamy and smooth Vanilla Frosting Surprise (Healthy Secret Ingredient) and enjoy!

- Whoopie pie pan with 12 cavities. You need 2 pans if you want to bake the whoopie pies all at once.
- This is the brand of Stevia powder I use. It’s a lot sweeter than regular sugar; therefore, you would use less of it.
- Handheld wire whisk for blending the ingredients.
- This set of mixing bowls has a non-slip silicone base and a pour spout. They are also dishwasher safe.

Instructions
- Preheat oven to 350 degrees F. Coat two 12-cavity whoopie pie pans with cooking spray. Set aside.
- Finely chop frozen spinach using a large chopping knife. I find the spinach chops better frozen than at room temp. Microwave for a few seconds to defrost. Wrap in 3 to 4 layers of paper towels and squeeze dry.
- Add flour, cocoa powder, Stevia, sugar, salt, and baking soda to a medium bowl. Add spinach, separating the clumps as best as you can. Use a whisk to blend into the flour mixture. Make 3 wells in the flour mixture using a spoon. Add oil to one, vinegar to the second, and vanilla to the third. Add water and whisk until blended.
- Pour batter into each baking sheet cavity, filling halfway. Bake for about 7 minutes or until a toothpick comes out with a few sticky crumbs. Allow to cool for a few minutes. Transfer to a cooling rack to cool completely.
- To assemble, spread a dollop of frosting on one cake. Top with a second.
- Makes 12 whoopie pies.

Curious you add the stevia if you’re using sugar. Is it a flavor thing?
Partly. Too much Stevia can have an aftertaste. Also, since only a small amount Stevia is needed to replace sugar, taking out all of the sugar would affect the crumb and texture of the cake.
