Bubble Up Pizza may not have been part of my childhood, but I’ve definitely become a fan. It’s quick to make, endlessly versatile, and the definition of comfort food. My turkey-and-bacon twist is especially handy after Thanksgiving, when leftover turkey is plentiful, but it’s just as delicious any other time of the year. And if turkey isn’t on hand, chicken makes an easy substitute!

One of the main reasons Bubble Up Pizza is so popular is its quick and easy preparation. Depending on your topping choice, prep can take as little as five minutes before baking! It only requires four simple ingredients—biscuit dough, pizza sauce, cheese, and your favorite toppings, such as pepperoni, sausage, bacon, or mushrooms. Just cut the biscuits, mix all the ingredients, and bake until golden and bubbly. It’s cheesy, cozy comfort food made in no time!

My version includes leftover turkey and bacon. Cooking the bacon adds 10 minutes to the prep time, but a total of 15 minutes to prepare a meal is still pretty darn good! If you want to cut down on prep time, use store-bought precooked bacon.

Ingredients needed:
- Leftover turkey—use whatever you have on hand, leftover turkey or store-bought. Leftover chicken can be used if you don’t have turkey.
- Bacon—8 strips of bacon, chopped and skillet cooked until crisp. I prefer to control the crispness and cook it myself, but you can also use store-bought, pre-cooked bacon as a shortcut.
- Refrigerator biscuit dough—I use Pillsbury Flaky Layers Buttermilk biscuits, which come in a 16-ounce size with an 8-count. Each biscuit is cut into 6 bite-sized wedges.
- Pizza sauce—use your favorite store-bought or homemade sauce. This recipe calls for a 16-ounce jar, which gives just the right amount of saucy goodness. If you like more sauce, feel free to add extra!
- Shredded cheese and grated Parmesan—you’ll need 8 ounces of shredded cheese. Pick your favorite kind of pizza cheese. For the best melt and creamy texture, freshly shredded cheese works beautifully; however, since this recipe is all about quick and easy, feel free to use the packaged kind. The same applies to grated Parmesan.
Recipe highlights:
- Cut the raw bacon into 1/3 to 1/2-inch pieces. Add it to a cold skillet over medium heat. Cook for 4 minutes, then stir and continue cooking until browned and crispy, stirring frequently as it begins to brown.
- Cut each biscuit into 6 wedges. Add the biscuits, turkey, pizza sauce, most of the bacon, and half of the Parmesan and shredded cheese in a mixing bowl. Mix to combine.
- Pour the biscuit mixture into a 9 x 13-inch prepared baking dish. Top with remaining Parmesan, shredded cheese, and bacon.

One of the best things about bubble-up pizza is the endless variations you can make. Here are some ideas for family-friendly meals:
- Plain pepperoni never gets old.
- BBQ chicken—with chicken, barbecue sauce, mozzarella, cheddar, and onion.
- Supreme—with pepperoni, sausage, bell peppers, onions, olives, mozzarella, and pizza sauce.
- Meatballs—with sliced defrosted frozen Italian meatballs, marinara sauce, mozzarella, and Parmesan.
- Chicken Bacon Ranch—chicken, bacon, ranch dressing, and mozzarella.
- Vegetable—with spinach, bell peppers, onion, mushrooms, olives, marinara, and low-moisture mozzarella.
- Ham and Pineapple—ham, pineapple, tomato sauce, and mozzarella cheese.
Make ahead:
One of the best things about this dish is that you can prepare it in advance, even a day ahead. Just make the recipe, except for baking, and store it in the refrigerator. When you’re ready, let it sit out on the counter for 20 minutes, then bake it as instructed. So convenient and easy!!

How to store and reheat:
Store any leftovers in a tightly sealed container and refrigerate them for up to 4 days.
When you’re ready to enjoy, cut into portion size, then microwave at 30-second intervals until heated through. Alternatively, reheat in a preheated 350° F oven for 15 minutes or until heated through. Loosely tent with aluminum foil if the top browns excessively.
Tip: Leftovers are best served with extra sauce, as it is absorbed during refrigeration.

- Preheat the oven to 350° F. Spray a 9×13-inch baking dish with cooking spray.
- If you have raw bacon, cut it into 1/3 to 1/2-inch pieces. Arrange them evenly in a cold skillet over medium heat. After cooking for 4 minutes undisturbed, stir it frequently to ensure even cooking until it reaches your preferred crispness. The total cooking time is approximately 10 minutes. Use a slotted spatula or spoon to transfer the bacon to a paper towel-lined plate to drain the fat.
- Cut each biscuit in half, then cut each half into three wedges. Add the biscuits, turkey, pizza sauce, most of the bacon, half of the shredded cheese, and half of the Parmesan to a mixing bowl. Stir to combine.
- Pour the mixture into the prepared baking pan. Sprinkle the remaining bacon, shredded cheese, and Parmesan over the top of the casserole.
- Bake on the middle rack for 25-30 minutes until the biscuits are cooked through and the cheese is bubbly.
- Makes 6 servings.
Skip this step if you have already cooked bacon.
Cutting the biscuit into small pieces ensures it is cooked through.
To check for doneness, cut into one of the biscuits in the center to ensure it’s cooked through.
Notes
- I use a glass baking dish, which takes a little longer to bake than a metal one. If you use a metal pan, check for signs of doneness a few minutes early.
Leftovers taste better with extra sauce since it absorbs during refrigeration.
