Fried Flatbread Pizza Rolls

Homemade flatbread is easy to make and great for pizza rolls. These pepperoni and hamburger pizza rolls are deep fried for crispy crunchy goodness! They are great for a snack or as an appetizer.

I’ll admit these pizza rolls might look a little rustic, but they are perfectly tasty! They are filled with pepperoni, cooked ground beef, store bought pizza sauce, and shredded cheese. Deep frying makes them golden and crispy! So good piping all by themselves or dipped in warm pizza sauce or  marinara.

The flat bread is an easy, no yeast recipe that comes together in about 5 minutes. The ingredients are hand mixed in a bowl and allowed to rest for 30 minutes prior to use. Anyone can do it.


  • Add flour, salt, sugar, and baking powder in a large mixing bowl. Blend.
  • Make a well.
  • Add water and oil. Mix with a fork until it comes together. 
  • Knead by hand for one minute until the dough becomes smooth. 
  • Lightly grease the bowl and dough.
  • Cover with plastic wrap. 
  • Allow to sit at room temp for 30 minutes.

Pepperoni and pre-cooked ground beef are in these pizza rolls, but they can be swapped out for meat protein of choice: bacon, sausage, ham to name a few. Jarred or homemade pizza sauce may be used. For the cheese, I used store bought shredded pizza cheese but any variety of your choosing will do.


  • Roll dough on lightly floured surface. 
  • Roll to 1/8-inch thickness. There should be enough dough for two 6-inch x 15”inch rectangles.
  • Keep rolled out dough covered with plastic wrap as you work to prevent drying.
  • Lift and lightly flour the work surface underneath the dough once it’s rolled out. This makes it easier to transfer the pizza rolls to the hot oil once they are assembled. Alternatively, place the rolled out dough on parchment paper.

  • Assemble just enough for each batch. The wet pizza sauce it will make the dough soggy if  all the pizza rolls are assembled ahead of time and left sitting.
  • Do not add too much pizza sauce. It will ooze and make crimping the edges difficult. 
  • Do not overstuff. It will make it harder to seal the edges and will burst open or leak upon frying.

  • Use a pan with deep sides to minimize splashing. The skillet pictured is too shallow for this job. It produced quite a bit of splashing. Use a grease splash guard, if available.
  • Preheat oil to 350° F.
  • Fry in small batches to maintain an even temperature.
  • Fry about 3 minutes on the first side and 2 minutes on the second, or until golden brown on both sides.

  • Make the flatbread. Allow to rest for 30 minutes at room temperature.
  • Add 1 1/4-inch of vegetable or canola oil to a pan with deep sides. Preheat to 350° F.
  • Divide the dough in half.  Roll one half into a rectangle approximately 6-inch x 15-inch. 
  • Lightly score 2 x 6-inch wide strips of dough without cutting all the way through to the work surface. The score lines are for visual divider guide.
  • On each strip, place a dollop hamburger, cheese, sauce, and pepperoni on one half of the dough. Avoid the edges. 
  • Slice through the dough to separate the strips.
  • Fold the and crimp edges close using a fork. Transfer to hot oil.
  • Fry until golden, flipping over once. Transfer to a cooling rack.
  • Repeat rolling out the remaining reserved half of the dough. Assemble and fry as previous.

For a lighter version, these pizza rolls can be baked. Place on a prepared baking sheet. Bake in a preheated 400° F oven for 12-14 minutes or until golden brown.

  1. Make the flatbread: add flour, salt, sugar, and baking powder in a large mixing bowl. Blend.

  3. Knead by hand in the bowl for one minute until the dough becomes smooth. It should clean the sides of the bowl and be slightly tacky but not sticky. Shape into a ball.
  4. Lightly grease the bowl and dough. Cover with plastic wrap. 
  5. Allow to sit at room temp for 30 minutes.
  6. For the pizza rolls:

  7. Add 1 1/4-inch of vegetable or canola oil to a large skillet. Preheat to 350° F.
  8. Divide the dough in half.  Keep one covered in the bowl.
  9. Roll the other half into a rectangle approximately 6-inch x 15-inch and about 1/8-inch thick on a lightly floured surface.
  10. Place on parchment paper, or lift dough and lightly flour surface underneath. This is to prevent sticking when transferring to hot oil.
  11. Lightly score the dough (do not cut completely to the work surface) into 2 x 6-inch wide strips. Place a dollop of hamburger, cheese, sauce, and pepperoni on one side of each of the strips. Do not overfill or allow filling to touch the edges.
  12. Use a pizza cutter or a sharp knife to slice through and separate the stips. For each strip, fold the free half of the strip over the filling. Press the seams closed. Crimp edges using tines of a fork to close. 
  13. Transfer to hot oil. Fry until golden, flipping over once. There will be a bit of splashing. Transfer to a cooling rack.
  14. Repeat steps 8-12 with the remaining reserved half of the dough.
  15. Serve with extra marinara for dipping sauce, optional.
  16. Makes 14 pizza rolls.

Note:

  • Baking alternative: bake in a preheated 400° F oven for 12-14 minutes or until golden brown.
