Thyme Baby Potatoes

These potatoes are easy to make, delicious, and a bit of a cheat since they are cooked entirely in the microwave. This recipe is my go-to when I’m short on time, and it pairs well with just about anything. I enjoy it for weeknight dinners as well as casual entertaining.

People always enjoy them, and no one ever remarks, “This tastes microwaved!” If I’m really pressed for time, I can prepare them earlier in the day and simply reheat them at mealtime. (No one ever notices!)

Description

These quick and easy thyme potatoes are buttery, lemony, and herbaceous. They are cooked in the microwave, providing a quick side dish for a weeknight dinner or casual meal.

  1. Poke each potato with a pointed knife to prevent bursting while cooking. Cut in half if greater than 1 1/2″ in diameter.
  2. Place in a large microwavable bowl with a lid. Add 2 tablespoons water. Cover with lid one corner of the lid slightly loose to vent. Microwave on high for 3 minutes (for 1200 Watt microwave oven). Increase cooking time by 1 minute or so for lower-wattage microwaves).
  3. Remove and mix the potatoes to promote even cooking. If it is almost dry, add 1 tablespoon or so of water. Cover and microwave for 3 minutes.  
  4.  Drain the liquid. Add the butter, garlic powder, black pepper, salt, and thyme. Mix well. Cover and microwave for 3 minutes or until knife or toothpick slides in easily.
  5. Drizzle with lemon juice and mix to incorporate.
  6. Makes 4 servings.

    they aren’t “quick and easy” if you have to peel them … duh

    1. There is nothing in the instructions that tells you to peel, and the pictures clearly show unpeeled potatoes.
