Brussels Sprouts with Apple Walnut and Bacon

It’s been interesting here in the Northeast. Within the past month, we have had an earthquake, a hurricane, and snow. Fortunately, in my area, we made it out unscathed, but it’s going to be a long, cold winter. Unfortunately for me, I will spend every day of the next six months under four layers of clothes…while indoors! No kidding! I’m SO cold-blooded!!

One of the things that will warm me up in the winter is this dish. Brussels sprouts are one of those under-appreciated vegetables that many people dislike. I’m not one of them. Yes, they are among the vegetables that release a distinctive aroma when cooked. However, they taste so much better than they smell!! How could they not taste good when sautéed and combined with bacon, apples, walnuts, apple cider vinegar, and brown sugar are involved?

Biting into this dish is like biting into a kaleidoscope of flavors and textures. There is the tenderness of the Brussels sprouts, the crispy-chewy bacon, the crunch of the walnuts, and the tender-crisp apple. There is also a balance of sweetness from the brown sugar, saltiness from the bacon, and tanginess from the cider vinegar. The unassuming, boring Brussels sprouts are transformed into something so much more exciting.

To make it, we start with the bacon. Yum!
