The Green Drink

The first thing you’ll notice about The Green Drink is its bright and super refreshing taste. While this smoothie has a fruity flavor, it’s packed with veggies and is full of nutrition. This healthy drink hits the spot on hot summer days and has proven to be picky-eater-approved!

I have mentioned several times that my husband is a picky eater and is very much a meat, cheese, and carbs person. He loves blueberries and blackberries, eating them year-round, but otherwise has very few other fruits and vegetables. However, he LOVES, LOVES a smoothie we affectionately call “Green Drink” in my house. He makes special requests for it and can literally guzzle an entire pitcher at one sitting!

As a typical picky eater, my husband avoids anything that’s meant to be light and healthy. However, he doesn’t care that this refreshing summer drink is loaded with vitamins, minerals, and beneficial nutrients. He only cares that he loves the way it tastes. I’m completely fine with that!!

The Green Drink
  • Fruits and vegetables—apple, banana, cucumber, celery, spinach, fresh ginger, fresh mint, and lemon juice.
  • Carrot juice and apple juice—use 100% juice with no sugar added.
  • Ice makes the drink thick and cold.
  • Sugar—is optional for this drink, which has a mildly sweet taste. If you prefer it sweeter, start with 1 1/2 teaspoons and adjust to your taste.

To make the drink smooth and amazing, you’ll need a powerful blender. I have a Vitamix blender, which makes the green drink super smooth and picky-eater-approved. If you have a powerful blender that you love, it will be just fine!

You will need a blender with a 64-ounce container to hold all the ingredients. If you have a smaller size, feel free to halve or quarter the recipe!

  • Chop the fruits and vegetables into 1/2 to 3/4-inch chunks. Remove the mint leaves from any woody stems.
  • Add ice, cucumber, celery, apple, ginger, and all liquids to the blender. Pulse a few times, then add the remaining ingredients and blend until smooth. Serve immediately.

This green drink is not only delicious and refreshing, but it is also packed with essential vitamins, minerals, fiber, and antioxidants. You’ll receive benefits from vitamins A, C, and K, as well as folate, iron, magnesium, B6, potassium, and beta-carotene.

The natural sweetness of fruits and vegetables provides all the sweetness you would need. Added sugar is not necessary, but if desired, 1 1/2 teaspoons is enough to enhance the taste. Not only does this healthy drink make you feel good about taking care of your body, but it also tastes so great that you’ll crave it!

I recommend trying the drink on its own first, and then you can experiment by adding other ingredients to enhance its nutritional value next time. Here are some suggestions for additional ingredients:

  • Protein powder—I recommend the flavorless varieties.
  • Kale—could be used as a substitute for spinach, or use a mix of the two.
  • Nuts—toss in a handful for added nutrients, including protein.
  • Chia seeds—are flavorless and provide fiber, omega-3 fatty acids, antioxidants, and proteins. They will also thicken the drink slightly.

This drink is best enjoyed freshly made while it’s thick, smooth, and ice cold. It will separate upon standing and thin out as the ice particles melt; therefore, storing leftovers is not recommended.

  1. Chop the fruits and vegetables into 1/2 to 3/4-inch chunks. Remove the mint leaves from any woody stems.
  2. Add ice to the bottom of a powerful 64-ounce capacity blender. Add celery, apple, cucumber, ginger, apple juice, carrot juice, and lemon juice. Pulse a few times to coarsely chop the contents to make room in the blender container.
  3. Add the remaining ingredients. Blend until smooth. Serve immediately.
  4. Makes 48 ounces or four 12-ounce servings.

Notes:

  • The drink should have a mildly sweet and fresh taste. If it doesn’t taste fresh and bright, add more mint leaves.
  • The sugar is optional. Start with the specified amount and adjust according to your taste if you prefer a sweeter drink.
  • If your blender container is small, halve or quarter the recipe to fit its size.
