Sometimes, my recipe creation process happens a little backward. The name pops into my head long before I ever think about the recipe.

That is exactly how this Harvest Guacamole was born. I dreamed up the name months ago, but finally brought it to life last week. It only took one try to nail the perfect recipe. In keeping with the harvest theme, I mixed in roasted pumpkin seeds, pecans, and sweet corn. The combination delivers an incredible contrast of creamy, crunchy, and savory flavors that pairs beautifully with blue corn chips.

This vibrant mix also makes it the perfect Thanksgiving appetizer. This dip offers a fresh, seasonal alternative to heavy starters and is sure to be a crowd-pleaser.

Instructions

  1. Slice avocados in half and remove seeds. Using a large spoon, scoop out the pulp of four of the avocado halves and place it in a mixing bowl. Add 3/4 of the lime juice. Using a fork, mash the avocados.ย 
  2. Peel the remaining two avocado halves and slice the pulp into small chunks. Add avocado, the remaining lime juice, and the rest of the ingredients into the bowl, then fold gently to incorporate.
  3. For best flavor,ย refrigerate for 1 hour before serving. Serve with tortilla chips.
  4. Makes 6 servings.
